JAMAICAN MEAL OXTAILS JERK CHICKEN RICE AND PEAS PLANTAIN CABBAGE COOKING AND EATING
Cuisinart Knife Set:
7.5 Quart Cast Iron Dutch Oven
Lodge Pre-seasoned Cast Iron Skillet:

Ingredients:
Pepper jack Mac n cheese plus recipe link:
8 oz elbow macaroni
5-6 oz Velveeta Queso cheese
8 oz pepper jack cheese
8oz half and half
1/2 stick butter
1/2 cup pepper jack cheese ( topping)
** seasoned macaroni with 1 tsp chicken bullion
4 lbs oxtails
1 lemon/lime (for cleaning)
1 med tomato
1 med yellow onion
2 green onion
fresh thyme (to desired taste)
salt to taste
black pepper to taste
1 scotch bonnet pepper (either slice or leave whole)
1/2 tsp ginger paste (or tsp fresh ginger or powder)
1 tbs garlic paste (or 3 garlic cloves)
1 tbs ketchup
1 tsp allspice
2-3 tbs Worcestershire sauce (or soy sauce)
browning & seasoning sauce (as desired
2 bay leaves ( optional)
oxtail seasoning (or all purpose seasoning to desired taste)
200 ml can Coconut milk (optional because coconut milk is not typical in an oxtail recipe)
(or just simply 400 ml water )
2 cups water (may need more)
vegetable oil (or olive)
Jerk Chicken:
12 whole wings split
1 Med onion
4 sprigs of thyme
2 scotch bonnet peppers ( this makes for mild heat)
Juice from 2 whole limes
2 tbs soy sauce
2 tbs olive oil
4 clove garlic
2 tbs parsley ( I used freeze dried parsley flakes)
2 tbs brown sugar
1 tbs cinnamon
1 tbs all spice
1 tbs paprika
1 tbs dried thyme
3-4 dried bay leaves
1 tbs kosher salt
2 tsp black pepper
bake 400 F approx 50 mins
Rice and Peas cheat:
3 cups Minute Brown Rice
15.5oz (small) can red kidney beans (i only added 3/4 of the can)
2 green onion
1 small onion
3 sprigs thyme
2 tbs butter
1/2 tsp allspice
3 cloves garlic
1 tsp granulated chicken bullion (or 1 chicken bullion cube)
400 ml can coconut milk
1 cup water (Not 300mL as mentioned in the video, Just use 1 cup)
black pepper (optional)
1/2 scotch bonnet pepper (optional)
Salt to taste
*drain the juice from the can of beans
Cabbage:
1 small cabbage head
EVOO
1/2 tsp ground chicken boilion
1/2 red pepper
1/2 green pepper
1 small yellow onion
2 green onion
1 tbs garlic paste (or 2-3 cloves garlic)
1 tsp granulated chicken buollion
fresh thyme
salt and pepper to taste
2 ripened plantain (fried in vegetable oil)

Hey guys today I'm making the most delicious fall of the bones oxtail recipe at home my way. OMG the meat was so tender and flavorful. This is not your typical Jamaican Oxtails Recipe. You can make Jamaican-style braised oxtails with butter beans if that’s the way that you like to make it. This is an easy oxtails recipe can be done in a crock-pot or pressure cooker. INGREDIENTS!! How To Make Oxtail.
3 1/2 LB oxtail cleaned with lime juice and lemon
1 tsp salt
1/8 tsp pepper
1 tbsp adobo seasoning
1 scotch bonnets pepper
3 tbsp green seasoning (Haitian Epis)
3 garlic cloves chopped
1 tbsp thyme leaves
1 tbsp chopped parsley
2 tbsp soy sauce
1 tbsp Worcestershire Sauce
1 packet sazon (goya)
2 tbsp olive oil
1 cup chopped tomato
2 tbsp ketchup
2 tbsp brown sugars or browning
2 cup chopped onion
1 cup green belle chopped
1 green onion chopped
8-10 cups of water

Flour to coat oxtails
3 Cups Beef & 3 Cups Chicken Broth
5 Bay Leaves
1 Tbsp Worcestershire Sauce

1/2 medium onion
1 tsp minced garlic
1 tsp green seasoning
3 allspice berries
1/2 tsp Sazon tropical
thyme
1/2 tsp garlic powder
1 tsp onion powder
3 cups water ( including liquid from the beans)
1 coconut milk powder packet
Corn Casserole
1 can creamed corn
1/2 cup sour cream
1/2 cup buttermilk
1/2 tsp baking soda
6 tbsp butter
1/2 tsp salt
1/2 tsp Creole seasoning
1.2 tsp salt free cajun seasoning
1/2 tsp pepper
1 cup flour
1 cup cornmeal
1 cup sharp cheddar cheese
1 habenero, finely diced
1/4 cup red bell pepper
1/4 cup onion
2 green onion
1 1/2 cup corn kernel ( canned or frozen is fine)
