Ingredients:
1/4 cup unsalted butter, melted
3 gloves garlic, minced
2 tbsp freshly squeezed lemon juice or more to taste
1 zest of lemon
4(6 ounce) fish fillet any kind
Salt and freshly ground pepper to taste
Chopped fresh parsley leaves, if desired
Direction:
1. Preheat the oven to 425 degrees fahrenheit
2. Season the fish with salt and pepper to taste and place onto the prepared baking dish.
3. In a small bowl, whisk together butter, garlic, lemon juice and lemon zest set aside
4. Drizzle the butter mixture onto the fish
5. Place into the oven and bake until fish flakes easily with fork, about 10-12 mins
6. Serve immediately garnished with parsley, if desired

Bluefish with Crispy Potatoes
The best pan for this dish is an 11 inch well-seasoned cast iron skillet. It produces the crunchiest potatoes with the easiest release. If you don't have one, use any oven safe skillet or a baking dish (you can line it with parchment paper to prevent sticking).
Fish substitutions: mackerel, cod, haddock, hake, halibut
Serves 2-3
1 Lb bluefish fillet, skin and pin bones removed
4 medium boiling potatoes (red bliss or yukon gold)
1/4 cup olive oil
1 garlic clove, mashed
2 tsp fresh squeezed lime juice (or lemon juice)
1 Tbsp butter, cut into very thin slivers
1 Tbsp chopped parsley, cilantro, dill, or basil
Salt and black pepper
Preheat the oven to 475F (245C) with the racks in the bottom and middle of the oven. Sprinkle fish with salt and pepper and return to the fridge while cooking potatoes.
Peel the potatoes and slice them 2 mm thick. A mandoline would come in handy for that, just make sure to wear cut resistant gloves (for equipment recommendations see below). Place potatoes in the pan (cast iron if possible), sprinkle generously with salt and pepper, and drizzle with 1/4 cup of oil. Rub all over and spread evenly. Place on the bottom rack of the oven until crispy on the bottom, 25-30 min.
Reduce the oven to 400F (200C). Dry the fish with paper towels. Place it on top of potatoes, rub it with garlic, sprinkle with lime juice and dot with butter. Place in the middle of the oven until the fish flakes, about 12 min per inch of thickness (this is longer than usual because potatoes will block some of the heat). Sprinkle with herbs. Let rest 7-10 min and serve.

Large size Bluefish
3 lime to wash the fish with salt
Paper towel
Brimming
Lime juice and 3 tbsp salt to salt down the fish, extract the water and form the fish.
Cover the salted fish with 3 layers of paper towel and double wrapped aluminum foil. Brim in the fridge for at least 5 hours.
Seasoning
Rosemary
Thyme
Dills
Mint leaves
3 red onions
1 large sweet onions
3 lemon
2 lime
1 tablespoon olive oil
1 tbsp garlic
1tsp ginger
2 tbsp all American seasoning Rub
1 tsp white pepper
1 tsp paprika
1/2 tsp Sazon
7 dry bay leaves
Cherry Mango Sauce
5 sweet pink cherries
3 ripe mango (scale base in quantity needed)
1 cup Chopped mixed res and white onion
1/2 cup chopped mixed bell peppers
3 tbsp scallion
1 tbsp mixed chopped rosemary and thyme
1 tbsp Avocado oil
1 tsp garlic
Coconut Rice
2 cups Basmati rice
Salt to taste
2 tbsp coconut oil
1/2 tsp Goya Perfect seasoning

Have you ever inadvertently caught a bluefish before when trying to catch striped bass or fluke or anything else? If you're not sure what to do with it then this recipe is absolutely for you. Bluefish meat can be relatively moist and does not usually present itself well in filet form unless handled very carefully. Instead of using the filet, we want you to mash it up and make them into burgers! This is perfect recipe for those summer evening grill outs and we hope you love it as much as we do!

INGREDIENTS
- 1.5 lbs. bluefish filet
- 1 lemon, to clean fish
- 1 teaspoon salt, to clean fish
- 1 tablespoon fresh oregano, minced (or 1/2 T dried)
- 1 tablespoon fresh thyme, picked (or 1/2 T dried)
- 2 tablespoons red onion, small dice
- 1 clove garlic, minced
- 1/2 cup cornmeal or breadcrumbs
- 1 egg, beaten
- 1 tablespoon mayonnaise
DIRECTIONS
1. To clean fish, douse fillets with lemon and salt, then rinse under cold water. Place on a clean, dry side towel or layered paper towel.
2. To prep fish, cut flesh from remaining skin making sure to remove the dark blue/red flesh (it can carry a very strong flavor). Pick through the bones then cut the flesh into large dice-sized chunks and place in large bowl.
3. Add fresh herbs (or dried), onion, garlic, bread crumbs (or cornmeal), mayonnaise, egg and mix well. Form into 4 burger patties and place on plate for storage in fridge for 30 minutes; this will ensure that burgers are firm. Cook on grill as you would any burger.
