How To make Blender Coconut Pie
1 Can evaporated milk; (13-oz)
3 Eggs
1 c Sugar
1 c Coconut; flaked
3 tb Vegetables oil
3 tb All-purpose flour
1/2 ts Vanilla extract
Ground nutmeg Combine all ingredients except nutmeg in container of electric blender. Process mixture until well blended. Pour into a greased and floured 10-inch pie plate (mixture will be thin). Sprinkle top of mixture with nutmeg; bake at 325^ for 40 minutes or until pie is set. Let pie stand 10 minutes before serving. YIELD: One 10-inch pie. Blender Lemon Pie
Blender Lemon Pie is a very quick way to make a delicious pie. Throw all ingredients in the blender , put in shell and bake. However , make sure the lemon peels are totally ground up, or the bits of peel will be bitter when eating them. Flakes of peel are fine, pieces are not. I ended up with some in mine and it took away from the otherwise yummy pie taste.

Recipe:
4 large eggs
1// cup (1 stick) melted unsalted butter
1 lemon , cut into wedges, seeds removed
1 1/4 cup sugar
1 tsp vanilla extract
1 frozen pie shell
Powdered sugar , for garnish
Preheat oven to 350°
Place eggs, butter, lemon slices , sugar and vanilla in blender , pulse until mostly smooth ( make sure lemon pieces are pulsed into tiny pieces)
Pour lemon filling into frozen pie shell and bake for 45 minutes or until set.
Remove from oven , totally cool then dust with powdered sugar before serving
