How To make Bird's Nests with Cheese
FILLING:
2 Eggs, lightly beaten
1/2 c Cheese, parmesan, grated
2 tb Cheese, ricotta
2 ts Mint, fresh, chopped OR
1/2 ts Mint, dried
1 pn Pepper, black, ground
PAStrY AND GARNISH:
8 Pastry, phyllo, sheets
1/2 c Butter, clarified **
3/4 c Cheese, Kasseri, crumbled OR
3/4 c Cheese, feta, crumbled
8 Olives, calamata (garnish)
** See "Clarified Butter" recipe. Filling: ======== In mixing bowl, combine eggs, Parmesan, ricotta, mint and pepper. Set aside. Preheat oven to 375 F. Cut phyllo pastry sheets in half crosswise and cover with waxed paper and a lightly dampened kitchen towel. Place 2 half sheets of phyllo, one on top of the other, horizontally on a work surface, trim off and discard a 1 inch strip from 1 short edge of sheets. Pull top sheet toward you so that it overlaps bottom sheet by about 1 1/2 inches. Dot exposed surfaces with clarified butter. Place a 1/2 inch diameter dowel or no. 11 knitting needle about 1 1/2 inches from long edge farthest from you. Fold edge over dowel.
Spread about 1 teaspoon of filling along edge of folded flap. Fold dowel over filling; then carefully roll up phyllo toward you, leaving 1 1/2 inch strip at bottom edge. Holding edges of the pastry at ends of dowel, gently press them toward center, forming pleats as you would on a curtain rod. (Do not worry if some filling oozes out.) Firmly holding ends of pastry to maintain pleats, carefully pull out dowel. Bring rolled edges of pastry around, forming a circle; the unrolled border will form bottom of each bird's nest. Transfer bird's nest to ungreased baking sheet. Brush all exposed surfaces of pastry generously with clarified butter. Bake until golden, about 15 minutes. Remove baking sheet from oven and place about 1 1/2 tablespoons of Kasseri in center of each nest. Return to oven until cheese is bubbly. 3 to 4 minutes. Place an olive in center of each nest. Serve hot. Its an excellent, delicious and innovative starter for any fancy party. Easy to make at home. Recipe Ingredients
Mint & coriander leaves 1/2 cup finely chopped
Green chillies 2 finely chopped
Carrot, cabbage & onion all 1/4 cup finely chopped
Vermicilli 1/2 medium bowl crush it .
Boiled chicken 1/4 cup
Black pepper 1 tsp
Salt 1 1/2 tsp
Cumin / zeera 1/2 tsp
Kalonji/black seeds 1 pinch
Chaat masala 1 tsp
Boiled medium potatoes 3
White pepper 1 tsp
For coating paste
All purpose flour 1/3 cup
Water as required
Cottage cheese as required
Method
First mash the potatoes then add black pepper, salt, cumin(zeera), black seeds(Kalonji), Chaat masala and white pepper. Mix it well.
Then add mint & coriander leaves , green chillies, cabbage, carrot and onion. Mix all the ingredients well.
put some water in hands then shape the batter into bird's nest.
Put the nests in freezer for 30 minutes.
In separate bowl add all purpose flour and water mix it and make a
Medium thin paste.
Coat all the potato nests with flour batter. Then coat with vermicilli.
Put wok on medium flame, deep fry the nests.
Turn them over carefully, When turn golden brown from both sides take them out .
Then take some cottage cheese. Make small egg shapes with cottage cheese. Put them into nests.
Decorate with some mint and coriander

Hello everyone today we are cooking a delicious birds nest it is a really easy to make and yummy at the same time its texture is crispy and with cheese balls on top. Kids love this recipe and the fact it looks like a nest other people will also be amazed. This snack is really good for your launch time and you can also store it in fridge for 2-3 days no problem.

Aloo-Paneer Bird Nest
For the Tikkis
1 cup Potatoes (boiled & mashed)
½ cup Green Peas
¼ cup Capsicum (chopped)
2 tsp Garlic (chopped)
2 tsp Ginger (chopped)
2 Green Chillies (chopped)
1 tsp Chilli powder
½ tsp Turmeric Powder
2 tsp Chopped Coriander
1 cup Paneer (grated)
Salt to taste
For the Paneer Eggs
½ cup Paneer grated
½ tsp Black Pepper
Salt to taste
Mint and Coriander Chutney
1 cup Mint Leaves (Chopped)
½ cup Coriander leaves (dhania patta)
1 Green chili (chopped)
½ wedge Lemon (juiced)
Pinch of Black/Regular salt
Method:
1. To Make the tikkis, take all the ingredients in a bowl, adjust the seasoning & combine well
2. Shape the tikkis into rounds & make a small dent in the center with your thumb to form the nest shape. Now dip these in a thin batter made with flour & water, then coat in broken vermicelli, at this point the tikkis should look like a nest
3. Chill the birds nest for 15 mins
4. Now heat oil in kadai & deep fry till golden
5. For the paneer eggs, mix the ingredients a bowl, shape into small eggs & deep fry in hot oil for 30 secs
6. In the mean time, prepare the green chutney by mixing all the chutney ingredients in a mixer
7. For the assembly, take the birds nest, add a spoon of green chutney in the center, add couple of leaves of fresh coriander & place 3 small eggs over it
8. Serve hot with ketchup & green chutney
9. Gobble! Gobble! Gobble!
