Vegan Mushroom Dumplings | Recipe by Mary's Test Kitchen
These mushroom dumplings are bursting with savory flavour. Shiitake mushrooms impart a rich, distinct flavour, while wood ear fungus add texture and napa cabbage and carrots give the dumplings juicy sweetness. The ingredients are pretty common in vegetarian Chinese cooking, but for good reason. These dumplings are perfect as a dish for dim sum or just keep them in your freezer for convenient any-time snack.

MUSHROOM DUMPLINGS RECIPE
Makes 24 dumplings
Printable recipe:
INGREDIENTS (US)
24 dumpling wrappers, 3 - 4 diameter, round or square
3 cups chopped napa cabbage
1/3 cup grated carrot (about one medium carrot)
1/4 cup shredded dried wood ear fungus
1 portobello mushroom, chopped (about 1 cup)
1 dried shiitake mushroom
1 tablespoon chopped scallion (green onion)
1 small clove garlic, minced
juice from 1 teaspoon of minced ginger
salt to taste
1 tablespoon cornstarch
Optional seasonings: soy sauce, white pepper, and roasted sesame oil, to taste
INGREDIENTS (Metric)
24 dumpling wrappers (7 - 10 cm diameter & 1 - 2 mm thick), round or square
200g chopped napa cabbage
100g grated carrot (about one medium carrot) [100g]
2g shredded dried wood ear fungus [2g]
1 portobello mushroom, chopped (100g)
1 dried shiitake mushroom (4g)
15cc chopped scallion (green onion)
1 small clove garlic, minced
juice from 5cc of minced ginger
salt to taste
15cc cornstarch
Optional seasonings: soy sauce, white pepper, and roasted sesame oil, to taste

Vegetarian Lettuce Wraps: Fast, Tasty, and Healthy!
Vegetarian Lettuce Wraps
Don't shy away from this Vegetarian dish. It has a lot of savory umami flavor!
Best of all, it can be made in 30 minutes or less.
Ingredients:
• Boston lettuce (any lettuce will work as wraps)
• Filling (tofu, mushroom, water chestnut, green onions)
• Shredded carrots. Other optional garnishes are bean sprouts, radish, red bell pepper.
Filling:
• 8 ounces baby Bella mushroom finely chopped. (any mushrooms will work)
• 8 ounces water chestnuts finely chopped. (jicama is a good substitute)
• 4 green onions, chopped.
• 1 package firm or extra firm tofu, with excess water removed and crumbled.
Prepare all the filling ingredients and set aside.
Sauce for filling:
• 3 Tbsp hoisin sauce
• 3 Tbsp soy sauce (you can use gluten free soy sauce to make the dish gluten free)
• 2 Tbsp white wine vinegar (you can use rice wine vinegar)
• 1 tsp sesame oil
• 2 garlic cloves, minced.
• 2 tsp freshly grated ginger
Mix all ingredients. Set aside.
Instructions:
Heat large pan with 2 tsp. vegetable oil. Sautee tofu for about 5-7 minutes.
Add mushrooms and cook with tofu for about 3-4 minutes, or until liquid evaporates.
Add water chestnuts and green onions. Cook until heated through.
Pour sauce and cook until well incorporated and heated through, about 1-2 minutes.
Assembly:
Place scoop of filling on each lettuce cup. Garnish with shredded carrots and any other vegetables you want.

99G Protein PACKED Cheesy Enchiladas! ???? Hot, Protein-Packed, & Delicious! ????????A taste so good, it'll teleport you to Lupe Tortilla! ????????
Ingredients:
- 448g 96% lean ground beef
- 120g diced green chilis
- 3g garlic powder
- 3g chili powder
- 549g enchilada sauce
- 6 low-carb high-fiber tortillas
- 224g fat-free mozzarella cheese
Instructions:
1. In a skillet, cook 448 grams of 96% lean ground beef until it's browned.
2. Add 120 grams of diced green chilis, 3 grams of garlic powder, and 3 grams of chili powder to the cooked beef. Mix everything together and let it simmer for a few more minutes.
3. Preheat your oven to 250 degrees Fahrenheit (120 degrees Celsius).
4. Pour a small amount of enchilada sauce into a baking dish to create a base.
5. Start building your enchiladas: Take a tortilla, place a portion of the meat mixture in the center, add some enchilada sauce, and sprinkle with fat-free mozzarella cheese. Roll up the tortilla tightly and place it seam side down in the baking dish.
6. Repeat the process with the remaining tortillas and filling, using up all the ground beef.
7. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle the rest of the cheese evenly.
8. Bake in the preheated oven for 20-30 minutes until the cheese is melted and bubbly.
