Soft Banana Oatmeal Cookies - The ULTIMATE Breakfast Cookie Recipe
I'll show you how easy it is to make banana oatmeal cookies. These breakfast cookies are so moist and soft yet have a wonderful chewy texture from the oats and raisins. This recipe is also super fast! You don't need a stand mixer and there's no chill time.
Recipe (yields 12 large cookies)
½ cup unsalted butter (dairy or vegan butter)
1 ripe banana
½ cup light brown sugar
½ tsp himalayan pink salt
1 egg
1 ⅓ cup rolled oats (I like the extra thick rolled oats if you can find it)
1 cup raisins
2 tsp vanilla extract
1 tsp cinnamon
170g or 1 cup of sprouted whole wheat flour (regular whole wheat flour is fine too!)
1 tsp baking soda
Bake at 375 deg F for 15-20 minutes until the edges are browned
