How To make Baked Potato with Curried Mushrooms.
1 6 oz 180 g potato scrubbed.
1 ts Margarine.
1 Shallot or small onion
Chopped 2 oz 60 g mushrooms wiped and
Sliced 1 ts Mild curry powder.
1 ts Tomato puree.
1 tb Low fat natural yogurt.
1 ts Fresh mint or half tsp dried
(optional) Salt and pepper. Sprig of fresh mint to Garnish 1. Preheat the oven to 200 c 400 f gas mark 6.
2. Bake the potato in the oven for about 1 hour until cooked:
(alternatively microwave on high for approximately 6 minutes). 3. Meanwhile heat the margarine in a small saucepan and saute with shallots
or onion for about 5 minutes until softened. Add the mushrooms and cook for 2 more minutes. Add the curry powder and stir well.
4. Blend the tomato puree and yoghurt. Add the chopped mint if using, and
season with salt and pepper. Stir into the mushroom mixture and heat gently for one to two minutes stirring constantly. 5. Split the baked potato and fill with the curried mushroom mixture.
Garnish with a sprig of mint. Preparation 10 minutes: cooking 1 hour (10 minutes if microwaved).

Serves: 4
Ingredients:
- 1 punnet mushrooms
- 4 potatoes
- 1 chopped onion
- 1.5 tablespoon Masala
- 1 grated tomato
- a pinch of salt
- Oil
Cooking:
1) Heat the oil and add the chopped onion. Allow it to braise on medium heat.
2) When the onions begin to brown, add the tomato and allow it to cook for a minute or two.
3) Add the potato, a bit of water, salt and masala to the pot and allow it to cook with the lid on until the potatoes are cooked halfway.
4) After 15 minutes, check the potatoes and add the mushrooms then allow it to cook with the lid on for a further 10 minutes, stirring regularly.
5) Remove the lid and allow it to cook until any excess water evaporates.
6) When the water has evaporated, then it's ready.

Stuffed mushrooms are a dish prepared using edible mushrooms as its primary ingredient. Many fillings can be used, and the dish is typically baked or broiled. It can be served hot or at room temperature and is sometimes served cold. The dish can have a meaty texture and serves as an hors d'oeuvre, side dish, or snack.
Making mushroom and potato curry roti rolls - a simple and delicious lunchbox filler!
Button mushrooms or as we called them cultivated mushrooms (because for the longest time we would not get any other types of mushrooms) make for a good quick curry that is also still delicious. Today we decided to make some lovely roti rolls with the mushroom and potato curry that makes for the perfect lunchbox filler!
Ingredients
250g white button mushrooms
500g potatoes, cubed small
1/2 cup oil
1 small onion, finely sliced
1 tbs mixed masala
1 tsp hurdee (tumeric) powder
1 tsp garam masala
1 tsp dhania and jeera powder
1 tsp rough salt
1 tsp crushed ginger garlic
1/2 tsp mustard seeds
1 medium tomato, grated
To braise - curry leaves and thyme
spring onion and dhania (coriander) to garnish
Serve with hot fresh rotis as well as some nuts chutney or carrot salad on the side!
