Oven Baked Cod With Potatoes
Oven Baked Salted Cod
4 filet of salted cod, soaked
6 medium potatoes,cut in chunks
2 medium onion, sliced half moon
1 red bell pepper, sliced
5 cloves garlic, slice
2 cup whole milk
¼ cup Portuguese olive oil
1 tbsp smoked paprika
1 lemon juice
1 lemon zest
½ cup white wine
Salt and pepper to taste
Soak the cod in water the day before, changing water a few times. The day you're going to cook, soak cod in milk and a few slices of garlic. Soak for up to one hour. In an ovenproof dish, drizzle some olive oil on the bottom of the dish. Layer the onion, bell pepper and garlic. Top the vegetables with cod fillet and set the potatoes around the cod. Pour the wine, lemon juice, lemon zest,parsley and paprika. Salt and pepper the potatoes to taste. Drizzle more olive oil all over the dish. Bake in a 400 degree oven for about 40 minutes or until potatoes are cooked.
Bacalhau Salgado no Forno
4 filés de bacalhau salgados, demolhados
6 batatas médias cortadas em pedaços
2 cebolas médias cortadas em meia lua
1 pimentão vermelho, fatiado
5 dentes de alho, fatia
2 xícaras de leite integral
¼ xícara de azeite português
1 colher de páprica defumada
1 suco de limão
1 raspa de limão
½ xícara de vinho branco
Sal e pimenta a gosto
Deixe o bacalhau de molho na água no dia anterior, trocando a água algumas vezes. No dia que for cozinhar, molhe o bacalhau no leite e algumas rodelas de alho. Deixe de molho por até uma hora. Em um refratário, coloque um fio de azeite no fundo do refratário. Disponha a cebola, o pimentão e o alho. Cubra os legumes com o lombo de bacalhau e disponha as batatas à volta do bacalhau. Despeje o vinho, suco de limão, raspas de limão, salsa e páprica. Sal e pimenta as batatas a gosto. Regue mais azeite por todo o prato. Asse em forno a 400 graus por cerca de 40 minutos ou até que as batatas estejam cozidas.

I love baking whole fish in the oven , its delicious , healthier and has minimal clean up after enjoying the dinner. This recipe am sharing simple and yet so sumptuous, your will definitely enjoy it any day of the week.
INGREDIENTS NEEDED
2 Whole fish, about 1.5 lbs each , scaled and gutted ( amusing Tilapia for this recipe but basically snapper , bass or branzino will work too )
1/2 Lemon , sliced into half moons
4 cloves garlic, rough chop
small knob ginger, thinly sliced
1 Tbs Cilantro, rough chop
1 scallion , rough cut
Salt and Black peeper
1 Tbs Vegetable oil
For the Vegetables
3 Small sweet potatoes, peeled and diced into bite size
2 Medium carrots, peeled and cut into bite size dice
1 Red onion, peeled and cut into 1 inch dice
1 Red bell pepper, deseeded and cut into 1 inch dice
1 Small bunch scallion, rough chop
10 Cloves garlic, peed and left whole or rough chop
1 Tub or about 10 ripe vine tomatoes, various colors ( if available )
1 Jalapeno, cut into slices ( optional )
For The Sauce
1/4 Cup Cilantro , rough chop
1 Scallion, rough chop
2 Garlic cloves, rough chop
1 Lemon zessted and juiced
1/4 c Extra virgin olive oil or just just vegetable oil.

INGREDIENTS:
Oven grilled red snapper ingredients
* Oven grilled red snapper ingredients
• 4 Lbs whole red snapper cleaned
• Rind and fruit of 1 lemon dehydrated
• 1 tsp dry red chili flakes
• 2 tbsp dry onion flakes
• 1 & 1/2 tbsp paprika
• 1 tsp smoked paprika
• 1/2 tsp white pepper
• 2 tsp granulated garlic
• vegetable bedding:- cut into rings, 1 red bell pepper, 1 red onion, 2 jalapeño peppers.
• add 3 tbsp cooking olive oil to 1
heaping tbsp of dry rub, drizzle (1/4 tsp honey, and stir into a sauce to be applied to fish and vegetable bedding.
*** store rest of dry rub in an air tight container for future use ***
*** broil/grill fish in oven at 500°F for 10 mins each, then bake at 400°F for 20 mins. ***
Roasted potatoes ingredients:
• 5 medium russet potatoes
• 1/4 cup water
• 2 tbsp cooking olive oil
• 1/4 tsp salt
• 1/2 tsp all purpose seasoning
• 1/4 tap freshly crushed black pepper
• 2 tbsp unsalted butter
• 1 clove garlic minced
• Chopped parsley for garnish
