HEALTHY OATMEAL FUDGE BARS RECIPE
Ingredients:
2 cups quick oats (180g)
1 cup ground oats or oat flour (100g)
1 cup chopped walnuts (125g)
1/3 cup honey (115g)
1/2 cup coconut oil (105g)
1 tsp vanilla
1 cup dark chocolate chips (or semi-sweet) 6 oz (170 g)
3/4 cup smooth peanut butter (190g)
Preparation:
In a bowl, combine honey, coconut oil and vanilla. Add the oats and oat flour (ground oats) and stir into the mixture until well combined. Mix in the chopped walnuts.
In microwave-proof bowl, add roughly chopped dark chocolate (or chocolate chips) and peanut butter. Microwave until melted, stirring with the spatula every 30 seconds.
In a lined baking pan spread 2/3 of the oat mixture. My pan is 10 by 8 inch, but you can use 9 by 9 or 8 by 8 inch size. Press well using the back of the spoon.
Pour the chocolate peanut butter fudge over the oats and spread evenly.
Spoon the remaining oat mixture over the top of the fudge, lightly pushing into the top.
Transfer to a fridge to set before cutting into bars. It should take about 2 hours, or just leave it overnight.
Cut in squares or bars.
Enjoy!

1:13 Assembling the peanut butter cookie fudge bars
Ingredients for making peanut butter cookie fudge bars:
1/2 cup butter softened
1/2 cup crunchy peanut butter
1/2 cup smooth peanut butter
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 tablespoon milk
1 tablespoon vanilla
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups flour
1 can (14 oz) sweetened condensed milk
3 cups chocolate chips semi-sweet or milk
Instructions for making chocolate peanut butter fudge bars:
- We started by adding the softened butter, crunchy and smooth peanut butter to a large bowl
- You could just use smooth peanut butter, but this adds a little extra crunch
- We also added the brown sugar and white sugar then beat everything together with an electric mixer until light and fluffy
- Next it’s time to add 1 egg, a tablespoon of milk as well as 1 tablespoon of vanilla, 1 teaspoon of baking soda and a quarter teaspoon of salt
- Mix again until everything is combined and then you can start adding your flour
- It’s best to add the flour in two batches, mixing in between with a rubber spatula to ensure it all gets fully incorporated into the butter mixture
- When all the flour has been added you will have a thick dough which you can then transfer to a baking dish lined with parchment paper for easy removal after baking
- Firmly press the dough into the pan, making the layer as even as possible
- This will now bake at 350 F for about 20 minutes
- After the cookie base has baked and cooled, it’s time to make the fudge
- To do this, simply heat sweetened condensed milk in a saucepan over medium low heat, add chocolate chips then stir until the chocolate has completely melted and smooth
- Now evenly pour that fudge over your cooled cookie base
- You can distribute the fudge by slowly tilting the dish in every direction then gently shaking it while level to even out the top
- For a little extra decoration, sprinkle the top with chocolate shavings or sprinkles
- This now needs to chill in the fridge for about 1 hour or until cooled completely before cutting into squares and serving
