Bacon Wrapped Chorizo Stuffed Dates
You’ve gotta sink your teeth into these gorgeous Bacon Wrapped Dates. The date itself has a paper-thin skin with a creamy center that is seriously like candy. When you stuff it with spicy chorizo and wrap it in smoky bacon, beware, an addiction is soon to follow. It’s so delicious with a drizzle of honey, that I promise you will want to eat the entire plate. They are so rich, though, you will have trouble eating more than one or two of these luscious appetizers.

Almond Stuffed Dates with Bacon Recipe - Receta de Dátiles con Bacon Rellenos de Almendra
This is a typical tapa from Elche, Alicante, in the southeast of Spain. The sweetness of the dates combines perfectly with the crunchy bacon and the almond.

INGREDIENTS
Dates 22
Almonds 22
Bacon strips 11
Olive oil
PREPARATION
1. Remove the pits from the dates.
2. Cut the bacon strips in halves.
3. Put an almond inside of the dates.
4. Wrap the date with the bacon and keep the shape with a toothpick.
5. Fry until the bacon gets crunchy.
6. Enjoy!

I'm always saying that recipes are easy. Easy this, easy that. But, people, this one is truly the easiest yet. Stuff a date, wrap it in bacon, and bake to get a sweet and salty, crispy-gooey bite that will make your holiday season.
I love serving these at any holiday gathering, big or small. Or, they are easy enough to make as a surprise pre-dinner treat just for you and your immediate family, friends, or roommates.
You can even make these ahead. Follow all the prep steps, place them on a parchment lined baking sheet, and cover in plastic wrap for up to 24 hours. When you're ready to serve, pop them in the oven until crisp.
See? Easy! And so insanely delicious.
How much of each ingredient you'll need depends on how many you'd like to make. For a party, I estimate about 2-3 per person, depending, of course, on what else you're serving. Seriously, though, these go fast and people eat a lot of them. Overestimate these and underestimate other foods if they'll be part of a big spread.
Each date will require 1-2 almonds, depending on how big they are. And each slice of bacon will cover 4 dates. You'll want to bake these at 400 degrees, but the amount of time it will take for the bacon to crisp will vary greatly depending on how thick cut it is. Really thin supermarket bacon can take as little as 5-8 minutes, while thick-cut artisanal bacon can take up to 18-20. Keep a watchful eye and look for signs of crispiness as you would while cooking plain bacon. And just like plain bacon, remember that it will crisp a bit more once out of the oven.
