Sal Scognamillo is the chef at Patsy's Italian Restaurant.
Founded in 1944 by Pasquale “Patsy” Scognamillo, Patsy’s Italian Restaurant has been in its current and only NYC theater district location (in the building next to the original site) since 1954. In almost 70 years of existence, Patsy’s Italian Restaurant has had only three chefs; the late Patsy himself, his son Joe Scognamillo, who has been at the establishment since the tender age of seven, and Joe’s son Sal, who has been manning the kitchen for the past 29 years.

▽ Story of the day: Good morning guys. Time to get your Mediterranean on! This baked fish with tomatoes and capers will rock your taste buds. A simple and healthy dish you can make in 35 minutes. The sour dough bread is crunchy on top and also soaks up the sauce on the bottom. Insanely easy, insanely delicious!
▽ Ingredient:
- Whole wheat flour
- Salt
- Instant yeast
- Oil
- Water
- Sesame seeds
- Tomato
- Tomato sauce
- Green onion
- Capers
- Black olives
- Pepper
- White wine
- Anchovy
- Fish
- Lemon peel

1957 The Queen's Muffins - Glen And Friends Cooking Old Cookbook Show
Today Glen cooks an old recipe from the Laura Secord Canadian Cookbook - the recipe apparently dates to the 1957 tour of Queen Elizabeth across Canada. The story is that these were made for the tour and a few had to be set aside each day for the queen to enjoy. In the end this is a solid recipe for a raisin bran muffin
Preheat oven to 375ºF
Grease thoroughly 16 medium sized muffing cups.
Sift or blend together
1 ⅔ cups all purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
Cream
5/8 cup butter
Gradually blend in
½ cup granulated sugar
2 eggs
Beat until light and fluffy.
Add dry ingredients alternately with 1 ¼ cups milk
Make 3 dry and 2 liquid additions, combining lightly after each.
Stir in
¾ cup wheat germ
1 cup raisins cut in half
Fill prepared muffin cups ⅔ full
Bake in 375º oven for 15 to 20 minutes or until golden brown.

2007 Throwback Hong Kong Egg Tart - Glen And Friends Cooking
In 2007 Julie and I (and a crew) flew to Hong Kong to shoot a job for the Hong Kong Tourist Board.
The first Michelin Guide to Hong Kong was being compiled (it was released late 2008 / early 2009) and the Hong Kong Tourist board wanted to show off what great food and dining experiences were to be had in Hong Kong. We ended up eating and shooting in most of the restaurants that made that first Michelin Guide - and cooking filming with those Chefs was an incredible experience and we learned a lot about Cantonese cuisine.
But...
Julie and I had been to Hong Kong many times before this, and what we really enjoyed was the food on the street, so in addition to the job we were there to do, we also filmed some stuff for ourselves.
