With an over abundance of tomatoes, green ones, I am making homemade green tomato bread. I is similar to a zucchini bread. It is a great way to use up small green tomatoes.
Green Tomato Bread (2 Loaves)
Oven at 350 degrees for 55 minutes.
2.5 cups Diced Green Tomatoes
2 cups Sugar
1.5 cups Chopped Walnuts
1 cup Oil
2 eggs
1 Tblsp Vanilla
1 tsp Salt
3 cups Flour
1 Tblsp Cinnamon
1 tsp Baking Soda
1/4 tsp Baking Powder

What you need to make Fried Green Tomatoes
GREEN TOMATOES
1 cup CORNMEAL (use a medium or fine grind...coarsely ground cornmeal can be a bit much)
1 cup all-purpose FLOUR (divided)
1 EGG
SEASONING (be generous, and use whatever seasonings you like...I prefer Italian seasonings, lots of garlic powder, and black pepper)
SALT
OIL for cooking
How to cook Fried Green Tomatoes
Every now and then I'll order fried green tomatoes at a restaurant, and whether I like them or not will depend on if they are battered in cornmeal or not. Cornmeal adds that great flavor and crunch that I associate with classic fried tomatoes. Buy hard, green tomatoes. They can have a tinge of red, but not too much, because you want them firm enough to cook and not become too soft.
Slice the green tomatoes to desired width; I like mine about ¼ inch thick.
Spread the tomato slices out and lightly salt.
Set up a breading station with 3 flat-bottom bowls.
In the first bowl place ½ cup of flour. Season the flour as desired, and mix.
In the second bowl whisk 1 egg and 1 Tbsp of cold water.
In the third bowl place the other ½ cup of flour and cornmeal. Season the cornmeal and flour as desired, and mix.
Using a paper towel, dry the tomato slices.
Heat a skillet of oil on medium-low heat. You don't need a lot of oil, about 1/8 inch deep.
Take a slice of tomato and on each side bread it lightly in the flour, then coat it in the egg, then bread it one final time in the cornmeal/flour mixture.
Carefully place the breaded tomato in the skillet. It should sizzle and begin to cook immediately when it hits the oil.
Cook each tomato 2-3 minutes or until golden brown in color.
Remove fried tomatoes from the skillet and place on a paper towel to drain for a moment, then serve.
Serve fried green tomatoes hot. They're good enough to eat plain, or you can accompany with hot sauce, creamy salad dressing, aoli dressing, or a mild mustard or creamy horseradish dressing.

Green Tomato Pie Recipe - from Aunt Sammy's Radio Recipes. It's the end of summer and we are left with some green tomatoes that just won't ripen; the days are too short now and the temperature is getting cooler. So what to do with the unripe green tomatoes? Fried green tomatoes are always an option, but let's try making a pie from green tomatoes. Green tomato pie! So who was Aunt Sammy, Aunt Sammy's Radio Recipes? Since I'm not American I didn't make the connection to Uncle Sam...
Ingredients:
6 medium sized green tomatoes
2 tablespoons water
½ lemon sliced
2 tablespoons cornstarch
1 cup sugar
1/8 teaspoon salt
¼ teaspoon cinnamon
2 tablespoons butter
Pastry ( )
Method:
Wash the tomatoes, remove the stem and blossom end, and cut into thin slices.
Cook the tomato, water, and lemon until the tomatoes are almost tender and drain.
When the tomato liquid has cooled add the cornstarch, which has been mixed with the sugar and salt, and cook until thickened.
Add the tomatoes, cinnamon, and butter, and mix thoroughly.
Pour the hot mixture into a baked pastry shell, add the top sheet of dough and bake in a moderately hot oven (375º to 400ºF.) for about 30 minutes, or until golden brown.

It's time for the classic Fried Green Tomatoes. This version is healthier but just as delicious. There's no real written recipe for this. Obviously you're gonna need some green tomatoes. I used Garbanzo bean flour mixed with oat milk and some Frank's Red Hot Powder to make an egg replacer coating for the tomato slices. I also coated them with Italian style panko bread crumbs and some avocado oil cooking spray. I baked them at 400 degrees in my toaster oven for 30 minutes - turning them halfway through. They were really delicious - quick too - I hope you give them a try!
