1 thick, lean ground beef patty per person 1 1/2 inch thick slice of Idaho potato per person 1 1/2 inch thick slice of large Vidalia onion per -- person butter or margarine salt and pepper On a piece of heavily buttered foil, place beef patty, topped with potato, topped with onion. Top onion with 2 tablespoons butter or margarine. Salt and pepper heavily. Twist foil together at top to enclose package. Place packages in ovenproof dish or on baking sheet. Vidalia Onion Rings and Cheeseburger Made Easy!
Stuck inside and just have ground beef, onions, and beer? Sounds like a great start! For this you'll need: -1.5lbs ground beef (I use 90% lean) -1 egg -garlic powder (or granulated garlic) -onion powder (or dried minced onion) -salt and pepper -good, sharp cheddar cheese
Mix it all together and form patties. Cook in pan or on grill. Can be served with or without a bun. I usually don't eat it with a bun to lower my carb intake and make room for the onion rings.
Onion ring batter is as follows: -2 large onions pealed and cut into rings(Vidalia are my favorite but any sweet onion can be used) (dry ingredients)
-1 cup flour -1 teaspoon salt -1/4 teaspoon black pepper (wet ingredients)
-2 eggs (separated yolks from whites) -1 Tablespoon melted butter -3/4 cup beer (I like something dark but not too bitter) -dash of cream of tarter
Mix the dry ingredients together in a bowl. Beat the egg whites and cream of tater until stiff peaks. Whisk the egg yolks, butter, and beer into the dry ingredients. Fold in the egg whites.
Cook in fryer or a couple inches of veggie oil in a pan at 375-400 degrees until golden brown, turning once halfway through. Don't crowd the fryer! Drain on a wire rack, on paper, or cardboard.
Eat til you pop. Stop buying frozen onion rings in the freezer section of the grocery store.
