VEGETABLE SPRING ROLL/ HOW TO MAKE FRESH VEGETABLE SPRING ROLL / EASY SPRING ROLL RECIPE
These fresh, crispy and crunchy vegetable spring rolls are such a delight! No wonder spring rolls are a party favourite in Nigeria. My vegetable spring roll with shrimps recipe is easy to eat and even easier to make.
Ingredients for vegetable spring rolls
250g deveined shrimps
Fish seasoning to taste
Salt to taste
1 teaspoon dried parsley
¼ to ½ tsp ground Black pepper
1 teaspoon Ginger-garlic paste
Vegetable oil
Mamador Spread
½ Onions - sliced
2 Scotch bonnet peppers - chopped
3 Carrots cut into thin strips
2 cups shredded Cabbage
½ cup Spring onions- chopped
1 Green bell pepper
2 tablespoons Corn flour
Water to make a thick paste
10 Spring roll wraps

Lumpiang Gulay: Fried Vegetable Spring Rolls
Lumpiang Gulay (Fried Vegetable Spring Rolls)
Lumpiang gulay is a medley of sautéed vegetables tucked inside crispy lumpia wrappers, served with a spiced vinegar dipping sauce.
Equipment
Wok or Sauté pan
Saucepan or wok (for deep-frying)
Ingredients
3 garlic cloves minced
1 small onion minced
4 ounces carrots julienned (about 1 cup)
4 ounces green beans thinly sliced (about 1 cup)
1 pound cabbage shredded (about 4 cups)
8 ounces mung bean sprouts (about 4 cups)
1 tablespoon soy sauce
1 tablespoon fish sauce
2 scallions sliced
½ cup chopped cilantro
20 lumpia or spring roll wrappers (8 squares) thawed, if frozen
Salt and pepper to taste
Neutral oil (for sautéing and deep-frying)
Spiced vinegar or sweet chili sauce for serving
Instructions
1. Heat a wok or a sauté pan over medium-high heat. Add about 3 tablespoons of oil. Sauté garlic and onion until softened, about a minute.
2. Add carrots and green beans. Cook until tender-crisp, about 3 minutes.
3. Add cabbage and cook until slightly wilted for about 3 minutes, stirring frequently for even cooking.
4. Add bean sprouts and cook until slightly wilted, about 2 minutes.
5. Season the vegetables with salt and pepper to taste. Add soy sauce and fish sauce. Toss them together. Taste and adjust seasoning as needed.
6. Turn off the heat, then add scallions and cilantro.
7. Transfer the filling to a strainer set over a bowl. Let it cool down for about 15 minutes.
8. Peel the wrappers carefully, one at a time, as you go along. They dry up quickly, so work fast or cover them with a damp paper towel.
9. Set a wrapper in a diamond shape and spoon about ⅓ cup of the filling across the lower half of the wrapper, forming a 3.5-inch log.
10. Fold the bottom of the wrapper over the filling and fold the sides inward.
11. Roll it tightly from the bottom to the top, forming a neat spring roll.
12. Seal the end of the wrapper with water to secure the roll. You can also use water with cornstarch or egg wash, depending on the type of wrappers you are using.
13. Repeat the process with the remaining filling and wrappers. If making ahead, you can freeze them to fry later.
14. Set a saucepan or wok over medium-high heat (350-375° F). Add enough oil to submerge the spring rolls. Deep-fry them in batches until golden brown, turning as needed, for 5-6 minutes.
15. Drain them on a paper towel-lined plate or a wire rack. Serve them hot with your favorite dipping sauce.

Ingredients:
Prepare Vegetable Spring Rolls: 00:15
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped 1 tbs
-Band gobhi (Cabbage) shredded 2 Cups
-Shimla mirch (Capsicum) julienne 1 Cup
-Gajar (Carrots) julienne 1 Cup
-Hara pyaz (Green onion) chopped 1 Cup
-Namak (Salt) 1 tsp or to taste
-Kali mirch (Black pepper) crushed ½ tbs
-Sugar 1 & ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Chicken powder 1 & ½ tsp or Chicken stock cube 1
-Safed mirch powder (White pepper power) 1 tsp
-Soy sauce 1 & ½ tbs
-Chilli sauce 1 & ½ tbs
-Water 1 & ½ tsp
-Cornflour 1 & ½ tsp
-Maida (All-purpose flour) 2 tbs
-Water 2 tbs
-Samosa sheet/Manda patti as required
-Cooking oil for frying
Prepare Chicken & Spaghetti Rolls: 02:22
-Cooking oil 2-3 tbs
-Hara pyaz (Green onion) white part chopped ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Shimla mirch (Capsicum) julienne ½ Cup
-Chicken boiled & shredded 2 Cups
-Spaghetti 150g (boiled as per pack’s instructions)
-Namak (Salt) 1 tsp or to taste
-Kali mirch (Black pepper) crushed ½ tbs
-Safed mirch powder (White pepper power) 1 & ½ tsp
-Soy sauce 2 tbs
-Chilli sauce 2 tbs
-Maida (All-purpose flour) 2 tbs
-Water 2 tbs
-Roll sheet/Manda patti as required
-Cooking oil for frying
Directions:
Prepare Vegetable Spring Rolls: 00:15
-In a wok,add cooking oil,garlic and fry until light golden.
-Add cabbage,capsicum,carrots,green onion and mix well.
-Add salt,black pepper crushed,sugar,red chilli crushed,chicken powder,white pepper powder,soy sauce & chilli sauce,mix & toss well.
-In water,add cornflour and mix well.
-Now add dissolved cornflour and mix well for a minute.
-Let it cool.
-In a small bowl,add all-purpose flour,water and whish well.Flour slurry is ready.
-Take roll sheet/manda patti,add prepared vegetable filling,fold over the sides,roll up and apply all-purpose flour slurry.
-Prepare the remaining rolls similarly (makes 18-20).
-Can be stored in an airtight container for up to 1 month in freezer.
Deep Fry:
-In wok,heat cooking oil and fry on medium flame until golden brown & crispy.
Baking:
-Brush oil on spring rolls & bake in preheated oven at 200C for 20-25 minutes (flip in between once after 15 minutes).
Air Fry:
-Brush oil on spring rolls & air fry in preheated air fry at 200C for 12-15 minutes flip in between once after 6 minutes).
