How To make Variety Spice Muffins
2 1/2 c Buttermilk baking mix (??)
1/2 c Sugar
1 ts Cinnamon
1/2 ts Cloves
1/2 ts Nutmeg
1/2 c Applesauce
1 sm Can undiluted evaporated
-milk 2 tb Oil
1 Egg, beaten
Using baby food eliminates the need to puree Combine baking mix, sugar, cinnamon, cloves, and nutmeg in medium bowl;mix well. Beat together applesauce, evaporated milk, oil, and egg. Add liquid mixture to dry mixture. Stir just until dry ingredients are moistened. Fill 12 buttered muffin cups 2/3 full of batter. Bake in hot oven (400F) 15-20 minutes. Cool slightly; remove from pan. Makes 12 muffins. TOPPING: Mix 1/4 cup sugar and 1/4 tsp cinnamon. Dip tops of muffins in 2 tbsp melted butter, then roll tops in cinnamon sugar mixture. ** You may substitute one fo the following for the applesauce: 4-1/2 oz jar strained plums, apricots with tapioca, strained pears, or strained squash. 2 cups (240 gr) all-purpose flour (*see note for gluten free option)
2/3 cup (130 gr) granulated sugar
1 TBSP (14 gr) baking powder
1/4 tsp salt
1 large egg, room temperature (*see note for vegan option)
2/3 cup (160 ml) whole milk
1 tsp vanilla extract
1/2 cup (120 ml) liquid fat (oil or melted butter, shortening, lard, or coconut oil)

This is an easy muffin recipe that can be used as a base for any flavor of muffin! In this video I will review The Muffin Mixing Method to make this simple recipe. This mixing method is used to make muffins, quick loaf breads (like banana bread & zucchini bread), as well as cornbread, pancakes, and waffles.

CINNAMON COFFEE CAKE MUFFINS
BAKING INSTRUCTIONS:
▪️ Bake in the oven at 350 degrees F for 9-12 minutes, or until a toothpick comes out clean.
▪️ Let your muffins cool for 5 minutes in the pan, before transferring to a cooling rack to cool for 10 minutes before adding icing drizzle.

Paleo Pumpkin Spice Muffins- Healthy, Easy Recipe!

INGREDIENTS:
¼ cup PRIMALFAT® Coconut Ghee
½ cup organic pumpkin puree
½ cup date paste
3 organic eggs
¼ cup coconut flour
½ tsp sea salt
½ tsp baking soda
½ Tbsp pumpkin pie spice
INSTRUCTIONS:
1) Preheat oven to 350F.
2) In a large bowl combine ghee, pumpkin puree, date paste and egg.
3) Blend together with an electric or hand mixer.
4) Add in coconut flour, salt, baking soda and pumpkin pie spice and mix thoroughly.
5) Fill muffin cups 2/3 full and place in oven for approx. 30 minutes.
These muffins are delicious with a variety of ingredients added in. Some ideas:

Are you a muffin skeptic?
I am. This is why I ONLY deal with muffins that are ACTUALLY good. I can't stand a dry, crumbly, too-sweet, boring muffin.
These pumpkin muffins are super tender, MOIST (I said it) and they somehow stay fresh for days!
I'm going to show you how to make a pumpkin cranberry muffin here, but you can easily jazz these pumpkin muffins up with whatever add-ins you like. Dates, chocolate chips, raisins, blueberries, nuts, heck—you can even ditch the spices and make it a savoury muffin with cheese!
This is such a nice option for a healthy pumpkin muffin. I hope you like it!
