How To make Summer Basil Salad
DRESSING:
1/2 c Sweet rice vinegar
3 ts Sugar (or sugar substitute)
2 ts Dijon mustard
1 1/2 ts Salt (optional)
2 Cloves minced garlic
1 1/2 ts Olive oil
Pepper to taste SALAD FIXIN'S:
1/2 c Chopped green onions
1/2 c Chopped green, yellow or red
Sweet peppers 1/2 c Lightly steamed and cooled
Green beans or asparagus 1/2 c Chopped carrot
1/2 c Chopped zuchini
3/4 c Golden raisins (do not
Substitute 1/2 c Or more finely chopped fresh
Basil 1/2 c Chopped fresh parsley
Carbs:Use any of the following, depending on how "McDougall-correct" (I've been learning a lot from you Barbara Z!) you want to be. 16 ounces dry fusilli (or any pasta, whole wheat is fine) boiled 1 cup dry
brown rice, cooked (don't know how much it makes cooked) combined with: 1 cup dry couscous (soak for 20 minutes in 1 1/3 cups boiling water) -or, combine with any other grains such as quinoa, barley, or whatever you like ~I think this would also be delicious and nutritious if beans (white, garbanzos, black) were added to the pasta or grains-use your imagination and let me know how it goes! INGREDIENTS:
Grilled Zucchini Salad
2 large zucchini sliced in half lengthwise
2 ears of corn
1 pint cherry tomatoes sliced in half
1/4 large red onion sliced into small pieces
1 large avocado diced
1 teaspoon kosher salt
4 ounces crumbled goat cheese or feta cheese
Fresh Basil Vinaigrette
1/4 cup avocado oil or olive oil
3 tablespoons apple cider vinegar
2 tablespoons honey
1/2 teaspoon kosher salt
3 teaspoons dijon
1/4 cup fresh chopped basil

Lemon Basil Vinaigrette Recipe
Full Recipe -
Ingredients
2 cups fresh Italian basil (approx 4 oz)
2 whole peeled garlic cloves
¼ cup freshly squeezed lemon juice (or lime juice)
½ cup extra virgin olive oil
10-12 whole black peppercorns
½ teaspoon salt
Instructions
Prepare The Basil
Remove the basil leaves from the stems and discard the stems. Measure 2 cups of lightly packed leaves (approx 4 oz) and wash them well with water.
Drain the extra water well. You can use a salad spinner to spin the extra water.
Make The Dressing
Add all the ingredients to the small jar of a blender or a food processor and blend for 60 seconds until basil and garlic are blended well with the liquid ingredients.
Note – If you are using a food processor with a large jar, you might want to double the recipe for proper blending. The same goes for Vitamix as it has wide blades and a small batch will be difficult to blend properly.
Transfer the vinaigrette to a clean glass jar. Use as and when required. Refrigerate for up to a week or freeze for up to 4 months. Mix well before use.
Notes
If your dressing is thick and you want a thinner consistency, you can add a little water to thin it out.
While storing the dressing, try to cover it with a thin layer of olive oil. It prevents oxidation and retains the bright green color of the dressing.
If you want the dressing to be stronger in flavor, add some dijon mustard.
Always try to make the basil dressing fresh, it tastes best that way.
