How To make Spinach & Leek Soup
1 1/2 tb Peanut oil
2 Garlic cloves, minced
2 lg Leeks, sliced
1 md Carrot, sliced very thinly
into matchsticks 10 oz Fresh spinach, washed &
:
stemmed 1/2 c Canned water chestnuts,
-- drained, rinsed, sliced 6 c Vegetable stock
2 tb Tamari
1 tb Rice vinegar
Salt & pepper Strips of 5-spice tofu Heat a wok or heavy soup pot on high heat for 30 seconds. Add the oil & swirl to coat. Add garlic, leeks, carrots & lower to a simmer & cook, covered for 10 minutes. Stir occasionally. Uncover wok, increase heat to high & add spinach & water chestnuts. Stir-fry for 2 minutes. Lower heat to medium. Add warmed stock, tamari & rice vinegar. Season to taste. Heat through but do not boil. Serve immediately, garnished with tofu strips. "Sundays at Moosewood Restaurant Cookbook"

Leek and Potato Soup
Leek and Potato Soup is a thick and creamy classic French Potato Soup that starts with garlic butter in which leeks are slowly sautéed to bring out the sweet flavour. Potato is then simmered until soft before being blitzed into a creamy soup before stirring in a touch of cream.
I love how versatile leek soup is - it's simple and comforting, yet also luxurious and elegant. It's Couch Food or an elegant starter for a dinner party. Good food is a universal language!

How to Make Leek Soup?
A list of materials :
2 leeks
3 Tablespoons of olive oil
1 piece chopped onion
2 cloves of chopped garlic
1 piece cube diced carrot
1 piece cube diced potato
1 overfull tablespoon of flour
6 water glasses of cold water
1 water glass of bone broth
Salt
Black pepper
Juice of 1 lemon
1 overfull tablespoon of butter
1 overfull tablespoon of red powdered pepper

Homemade Creamy Leek and Potato Soup
A classic creamy Leek and potato soup with sauteed leeks, a hint of garlic and tender potatoes. I love how a few simple ingredients can be blended together to make something that tastes extra special.
This soup is great for a tasty lunch, or serve it with crusty bread for a warming dinner.

Ingredients:
• 4 tbsp (60g) unsalted butter
• 1 small onion, finely chopped
• 3 large leeks, green parts discarded, white (or very pale green) parts sliced
• 2 cloves garlic, minced
• ¼ tsp salt
• ¼ tsp celery salt
• ½ tsp black pepper
• 1 lb (450g) floury potatoes*, peeled and chopped into bitesize pieces
• 4 1/6th cups (1 litre) chicken or vegetable stock
• ½ cup (120ml) double/heavy cream
To serve:
• 2 tbsp double/heavy cream
• 2 tbsp freshly chopped chives
• Good pinch of black pepper
Instructions
1. Melt the butter in a large saucepan over medium heat.
2. Add the onion and leeks and cook for 5-7 minutes, stirring often until softened.
3. Add the garlic, salt, celery salt and pepper and cook for a further minute.
4. Add the potatoes and stock. Stir, bring to the boil and simmer for 20 minutes – until the potatoes are starting to fall apart. Turn off the heat.
5. Using a slotted spoon, remove 2 scoopfuls of the potato and leek mixture and place in a bowl – this is for topping the soup later.
6. Blitz the remaining soup either carefully using a stick blender, or by transferring it to a blender that can be used for hot liquids.
7. Pour the soup back into the pan along with the cream and heat through on medium heat for 2-3 minutes until hot.
8. Spoon into bowls and top each bowl with a spoonful of the potato/leek mixture.
9. Swirl over a drizzle of cream and top with chopped chives and a pinch of black pepper.
