How To make Spanish Tofu Omelette
1 tb Olive oil
1 ea Garlic clove, minced
1 sm Onion, chopped
1 md Potato, sliced
1/4 ea Green bell pepper, diced
1 sm Tomato, chopped
1/4 ts Oregano
1 lb Soft tofu, patted dry
1/4 c Flour
1/4 ts Turmeric
1 t Nutritional yeast
Salt & pepper to taste
In a frying pan over med heat, heat the oil or water and saute the garlic, onion, potato, and green pepper until the potato is cooked, about 10 mins. In the meantime, blend the reamining ingredients in a blender until smooth. Add the tomato and tofu mixture to the pan and cook, covered, over a very low heat until the omelette is set, about 10 mins. Serve with salsa. In this video, I will show you how to make a tofu omelette recipe. The Omelet recipe is an easy dish to make, it's done quickly and it's very delicious. You can make it for breakfast, for lunch, for dinner or for whenever you are hungry. If you like egg recipes, maybe you will like my Thai omelette recipe today. Thai omelette likes to add a lot of oil. If you don't like it, you can add a little oil. Thai people like to serve omelette with steamed rice and chili sauce or tomato ketchup.
Ingredients
2 eggs
50 g egg tofu
1 tablespoon fish sauce
1/4 teaspoon sugar
1/3 teaspoon pork stock powder or chicken stock powder
2 red chilies
1 tablespoon chopped green onions
1 tablespoon cooking oil (I like to use sunflower oil.)
Instructions
1.Cut chilies into small pieces.
2.Cut the tofu and egg into bite-sized pieces.
3.In a bowl, crack in eggs.
4.Season the eggs with sugar, pork or chicken stock powder, fish sauce.
5.Using a fork to beat the ingredients until combined.
6.Stir in the chopped green onions, chilies and egg tofu.
7.In a flying pan on high heat, pour in the cooking oil.
8.Once the cooking oil is hot, pour in the eggs mixture. Fry the eggs until golden brown on both sides for 2 minutes per 1 side.
9.Transfer the tofu omelette into a plate and serve. Enjoy!

Vegan Omelet Spanish style using chickpea flour? Is this even possible? Yes, it is! I am absolutely IN LOVE with this recipe, it is extremely versatile and highly nutritious due to all that lean clean protein chickpeas have!

Ingredients for vegan Omelet/ chickpea eggless omelet (gluten-free, nut-free):
2 1/2 cups of boiled cubed potatoes
1 cup of chickpea flour
1 cup of water
1/2 cup of red peppers
1/2 cup of onions
1/3 cup of frozen peas
2 cloves of garlic, minced
1 cup of spinach
1 TBSP of fresh parsley
1 tsp of oregano
1 tsp of salt
1/ tsp of black pepper
1 tsp of sweet paprika
1/2 Tsp of baking soda
2 tablespoons of vegan butter
DIRECTIONS:
- boil the potatoes until cooked but firm, let them cool completely
- in medium heat, add 1 tablespoon of the butter and saute the onions and red peppers to a skillet, cook until soft
- add the garlic and saute for 40-50 seconds more
- mix all the dry ingredients to a bowl, mix well
- add the water, mix it well
- add lemon juice, mix
- add the potatoes, mix carefully so they don't break
- in a frying pan, add 1 tbsp of vegan butter, heat then add the mixture
- cook it medium-low heat for 5 to 6 minutes each side, add more butter if needed
- It cannot be frozen.
