Recipe:
1 bag of 15 Bean Soup(I used the Cajun flavor)
At least 1 ham hock(I used 4)
2 quarts of chicken stock
1 large red onion, medium chopped
1 tbsp of garlic powder
1 can of diced fire-roasted tomatoes
Salt and Pepper to taste
Optionally: Add a touch of Accent to taste at the end
Directions:
Under cold water, rinse your ham hock and place inside your Instant Pot or pressure cooker. Pour into the pot 1 quart of your chicken stock. Cook the ham hock for 20 minutes on high pressure using the Meat/Stew setting. The Instant Pop pressure cooker should be in the sealing position.
While the ham hock cooks, rinse your bag of 15 bean soup. Be sure to look for any debris such as piece of wood or stones which might be in the dry beans. Into the Instant Pot pressure cooker with the cooked ham hock, add the rinsed beans, 1 quart of chicken stock, the included bean seasonings, chopped onions and garlic powder. Cook the beans for 30 minutes on high pressure using the Bean/Chili setting. The Instant Pot once again should be in the sealing position.
To complete the soup, add the can of fire-roasted tomatoes to the cooked beans. Season to taste with salt, pepper and Accent. Plate and enjoy!
