Master The Classics: Vanilla Punch
Vanilla Punch was first published in the first edition of Jerry Thomas' Bar-Tenders manual also known as The Bon Vivant's Guide or How to Mix Drinks in 1862. And I will admit this is a bit of a reimagining of the original recipe. The original called for a gin sour with a teaspoon of Vanilla Extract. In this video I decided to use Licor 43, which is a Spanish Liqueur who's main flavor component is Vanilla.
This is a one off punch recipe. I know many of you have been asking me for a basics of Punch episode, which I am still planning to do, so i decided to do this episode to tide you guys over. Hope you enjoy!

18th Century Energy Drink - Switchel 18th Century Cooking
Today we prepare what would have been an 18th Century equivalent of a modern energy drink. This revitalizing drink was served to tuckered field hands and sailors.
RECIPE: Start with a half gallon of drinking water. Add half a cup of unsulfured molasses, a quarter cup of apple-cider vinegar, and a heaping tablespoon of powdered ginger. Stir very well. #townsendsswitchel

Using spices that I'd never heard of, I recreate the Hippocras recipe from The Forme of Cury. Served hot or cold, this spiced wine is a treat year round.

ORIGINAL 14TH CENTURY RECIPE (From The Forme of Cury)
Pur Fait Ypocras Treys unces de canell & iii unces de gyngenuer, spykenard de spayn le pays dun denerer, garyngale, clowes gylofre, poeurer long, noiez mugadez, maziozame, cardomonij de chescun i quart’ douce grayne & de paradys, flour de queynel, de chescun dm unce de toutes soit fait powdour, &c.
To Make Hippocras: Three ounces of cinnamon and three ounces of ginger, spikenard of Spain the size of a denier (or small french coin). Galangal, cloves, long pepper, nutmeg, marjoram, cardamom, a quarter ounce. 1/10th ounce Grains of paradise and powdered cinnamon, etc.
MODERN RECIPE
INGREDIENTS
- 2 Bottles Red or White Wine
- 1 ounce (28g) of cinnamon sticks
- 1 ounce (28g) of fresh ginger slices
- ¼ Teaspoon spikenard root
- 1 Teaspoon galangal
- 1 Teaspoon cloves
- 1 Teaspoon Long pepper
- 1 Teaspoon Nutmeg
- 1 Teaspoon Marjoram
- 1 Teaspoon Cardamom
- ½ Teaspoon Grains of Paradise
- ½ Teaspoon Ground Cinnamon
METHOD
1. Pour the wine into a large pitcher. Grind your spices and mix them into the wine. Cover the container and let sit for 1 to 2 days.
2. Pour the wine into another pitcher through a coffee filter or jelly bag to remove any spices*. Serve wine warm, cold, or at room temperature.
*The remaining spices can be used in stews, sauces, or to make soap.

Double Indemnity's Fishhouse Punch | How to Drink
On this episode of How to Drink, I’m taking a look at a single serving version of Philadelphia Fish House Punch from Double Indeminty, the great noir! If you’ve never seen Double Indemnity, or aren’t very familiar with Film Noir, you really owe it to yourself to see this one and to give the Fish House Punch a try. Hope you enjoy, cheers!
Double Indemnity is one of the defining films of the Film Noir genre, and if you're used to seeing Fred McMurray in his later Disney roles, this one might be a shocker. Fred plays an insurance salesmen trying to help a bored housewife pull off an insurance scam and murder her husband. The housewife here is of course Barbara Stanwyck in one of the all time great femme fatale roles. I say enough on camera so I won't rehash it all here, but I will say this: If you've never seen Double Indemnity, or aren't very familiar with Film Noir, you really owe it to yourself to see this one. I think you'll like it.
Fish House Punch Ingredients:
- .5 oz or 15 ml Lemon Juice
- .25 oz or 8 ml Lime Juice
- .5 oz or 15 ml Simple Syrup
- .75 oz or 45 ml Peach Brandy
- .75 oz or 45 ml Cognac
- .75 oz or 45 ml Jamaican Rum
- Shake Over Earl Grey Tea Cubes
- Garnish with Lime and Cherry
