How To make Roasted Garlic with Goats Cheese
4 Bulbs garlic
2 Bay leaves, snapped in half
4 Sprigs rosemary
Juice 1/2 lemon 4 tb Olive oil
4 oz Soft goats cheese
1/8 pt Double cream (2 fl oz)
2 tb Fresh coriander, chopped
1 Plump red chilli pepper
-deseeded, chopped 1 Lemon quartered lengthways
Hot crusty toast Salt & pepper Preheat the oven to gas Mark 6, 400?F, 200?C Use scissors to cur away the thick central stem from the garlic bulbs and slice about 1/4in off the top of each bulb. Pack the bulbs into a small ovenproof dish, tuck half a bayleaf into each bulb, season generously with the salt and pepper, and cover with the sprig of rosemary. Squeeze over the lemon juice and anoint with olive oil. Cover loosely with baking pachment. Cook, basting a couple of times, for 35 minutes or until the garlic is soft and squashy to the touch. Meanwhile, mash the goat's cheese and stir in the cream to make a smooth, thick paste. Mix in the coriander and chilli. Allow the garlic to cool slightly and serve it in its dish. The thing to do is to let everyone help themselves to a bulb of garlic and some of the cooking juices. Serve the goats cheese separately, with plenty of hot crusty toast and lemon wedges to squeeze over the top.

Recipe - Roasted Garlic and Goat Cheese Flan
INGREDIENTS:
●2 cloves elephant garlic, thinly sliced
●1 cup roasted garlic cloves
●1 cup good quality goat cheese, or Chevre
●4 large eggs
●1 1/2 cups cream
●2 tablespoons freshly grated Pecorino
●1/4 cup freshly chopped garlic chives
●1 1/4 teaspoons salt
●1/2 teaspoon black pepper
Baked Goat's Cheese with Grapes, Honey & Thyme
A warm, cheesy, melty, tasty one from our friend Jesse @ Parlour in Kensal, London, UK. This is a quick and easy one pan dish to knock up for your night in. Give it a crack and please let us know how it goes in the comments.
Recipe (serves 2, or 1 if you're hungry):
Ingredients
* Slice of goat's cheese – or a small log
*Honey
*Grapes, small whole or big ones in half – green or red..
*Sunflower Seeds (chopped nuts like hazelnuts will work too)
*Thyme
*Soft Cooked Garlic (confit or roasted) – or some THIN raw slices OR both!
Spinach or watercress to finish.
Method:
Pile on all the ingredients (apart from spinach/watercress) on to the goats cheese, bake in the oven for 5 mins at 180c/350f until SOFT.
Serve with a bouquet of spinach or watercress and some crusty bread.
You may notice there aren't specific quantities here....this one is for you to get creative...

Grilled vegetables, roasted garlic and goat cheese sandwich - Day 22 of 28 #FebBBQ2023
Today’s grilled sandwich consisted of grilled sourdough bread, red onion, eggplant, zucchini, mushrooms and red peppers. I topped the sandwich with roasted garlic, goat cheese and Sriracha hot sauce. This sandwich was absolutely amazing in my humble opinion.
About the challenge: I’m cooking at least one item on the BBQ every day for 28 days straight during the cold Canadian month of February. I’ll share a video of what I’ve cooked on the same day, each day. Snow and cold weather won’t stop me! ???? Check back every day!
