How To make Reuben Loaf
3 3/4 c All-purpose flour
1 pk Active dry yeast
1 tb Sugar
1 tb Butter or margarine,
Softened 1 ts Salt
1 c Warm water (120 to 130
Degrees) 1/4 c Thousand Island salad
Dressing 6 oz Thinly sliced corned beef
4 oz Swiss cheese
1 cn Sauerkraut (8 oz.), drained
1 Egg white, beaten
Poppy seeds In a mixing bowl, combine 2 1/4 cups flour, yeast, sugar, butter and salt. Stir in warm water and mix until a soft dough forms. Add remaining flour if necessary. Turn out onto a lightly floured surface; knead until smooth, about 4 minutes. On a lightly greased baking sheet, roll dough to a 14 inch x 10 inch rectangle. Spread dressing down the middle of one half of the dough, leaving a 3/4 inch space along edges. Top with layers of beef, cheese and sauerkraut. Fold the remaining half of dough over the meat mixture. Pinch edges together to seal. Cut small slits in dough to vent Baste with 1 egg white and sprinkle with poppy seeds. Bake at 400 degrees for 25 minutes or until lightly browned. A Reuben Sandwich Inspired Loaf made for a party! Recipe below????????????????????
INGREDIENTS
2 pounds of sliced pastrami
1 large uncut loaf of rye bread
2 cups of grated swiss cheese
2 cups of grated mozzarella cheese
SAUERKRAUT
5 cups of thinly sliced cabbage
2 tbsp salt
1/2 cup water
RUSSIAN DRESSING aka Thousand Island Dressing
1 cup mayonnaise
1/2 cup ketchup
2 tbsp sweet relish
2 tbsp finely minced onion
2 tbsp white vinegar
2 tbsp sugar
Salt and pepper to taste
For the sauerkraut
Step 1
Combine shredded cabbage with salt and water and weigh it down. Cover it and let it ferment in the fridge for 4-5 days
For the dressing
Step 2
Combine all ingredients in a bowl and set aside in the fridge
Step 3
Combine the mozzarella cheese and the swiss cheese
Step 4
Slice the p[pastrami into smaller pieces so the loaf doesn't pull apart when eating.
Step 5
Heat the pastrami on a medium skillet. Add some water and cover to heat through and steam the meat.
Step 6
Cover the loaf in the dressing, then add a generous amount of the sauerkraut on top. Top with pastrami and the cheese. Bake in the oven at 400 degrees F for about 15 minutes until the cheese starts to brown and bubble.

●1 cup chili sauce

As far as I’m concerned, the Reuben just might be the greatest sandwich out there. Though I’m not a particularly huge fan of any of the components when they’re on their own, when they come together in that sandwich, pure magic happens. And that same magic – that combo of salty corned beef, nutty Swiss, tart sauerkraut, caraway, and plenty of creamy Russian dressing – is just what you get in this Reuben Pull-Apart Bread. Dark dough
-Flour 200 g
-Rye flour 50 g
-Molasses 1 Tsp
-Warm water 180-200 ml
-Salt 1/4 Tsp
-Active dry yeast 1/4 Tsp

-Oil 1 Tbsp
Light dough
-Flour 200 g
-Rye flour 50 g

In a bowl, Add sugar, yeast & warm water.Let activate yeast for about 5 minutes.
Put flour and salt into a large bowl and pour yeast mixture.
Mix until all dough come together.
Knead by hand few minutes.OR Just Mix with spatula until all dough come together.
Cover dough and keep to warm place(I keep inside of oven. just turn on the light)
Let rise until double in size about 50-60 minutes.
Stretch dough & cover dough and let it rest for 10-15 minutes.
After 15 minutes, divide into 4 pieces.(2 pieces each)
Make the dough to flatten &place the light dough & dark dough alternately. Roll them all together.
Place the dough seam side down on baking sheet.
Cover the dough(or spray some water) &let it rise until double in size for about 30 minutes.
After 30 minutes, cover with some oil.
Preheat oven for 190°C or 375 °F.
Bake for about 25-30 minutes.
