How To make Quick Picante Salad Toss
Ingredients

cup
romaine lettuce, torn
2
cup
tortilla chips, OR 2 c corn chips
2
each
tomatoes, cut into thin wedges
2/3
cup
olive, ripe, slices
1/3
cup
picante sauce
1/3
cup
italian dressing, bottled
1/2
cup
cheddar cheese, freshly shredded OR monterey jack
3
each
bacon, slices, crisply cooked, crumbled
Directions:
Combine lettuce, tortilla chips, tomatoes and olives in large bowl. Combine picante sauce and dressing in screw-top jar or small bowl; shake to mix well. Pour over salad; toss lightly. Sprinkle with cheese and bacon. Serve immediately with additional picante sauce.

Easy Cucumber Salad is a family favorite recipe that people have been enjoying for ages. Thinly sliced cucumbers and onion are tossed in a sweet and tangy vinaigrette for a classic side dish.

✅Ingredients
• 2 English cucumbers, thinly sliced
• 1 teaspoon salt
• 1 red onion, thinly sliced
• 1 cup distilled white vinegar
• ½ cup water
• ½ cup granulated sugar
• 2 tablespoons fresh dill, minced
✅Instructions
1️⃣ Season cucumbers with salt in a large bowl and let sweat 1 hour. Drain liquids and toss cucumbers with onion slices.
2️⃣ In a small saucepan over high heat, pour in white vinegar and water and stir in sugar until dissolved and liquid turns clear, 3 to 5 minutes.
3️⃣ Pour over cucumbers and onions. Stir in dill. Cover with plastic wrap and refrigerate 1 hour. Serve cold or at room temperature.

This Chinese smashed cucumber salad is a refreshing side dish. Crispy cucumber pieces are tossed in a garlicky and tangy sauce.
FULL RECIPE:
Ingredients
Chili Oil
3 cloves garlic, minced (about 4 teaspoons)
1 tablespoon minced ginger
1 1/2 teaspoons chili flakes
2 tablespoons gochugaru (Korean pepper flakes)
1 teaspoon kosher salt
1/3 cup oil (can be vegetable, grapeseed, or any neutral oil)
Cucumber Salad
1 to 1 1/4 pounds cucumbers
small pinch of kosher salt (1/4 to 1/2 tsp)
3 cloves garlic
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons chili oil with spices
1 1/2 teaspoons sugar
2 teaspoons sesame oil
toasted sesame seeds for garnish
You do not need to rinse the cucumbers after you salt them. If you're conscious about your salt intake, you can reduce the amount of soy sauce slightly.
