How To make Presto Praline Cookies
1/2 c Butter
1/2 c Margarine; see note
1 c Packed light brown sugar
Nonstick cooking spray 12 Graham crackers; (see note)
1 c Chopped pecans
Recipe by: St. Louis Post-Dispatch 10/21/96 Preheat the oven to 350 degrees. In a heavy 2-quart or larger saucepan, combine the butter, margarine and brown sugar; cook over low heat, uncovered, stirring from time to time. Meanwhile, coat the bottom and sides of a 15-by-10-inch jelly roll pan with cooking spray. Line the pan with graham crackers. (You may have to break some to make them fit.) When the butter and margarine melt, raise the heat to medium and bring the mixture to a boil. Boil 1 minute, stirring constantly. Reduce the heat to low and continue to boil, stirring constantly, for 1 more minute or until the butter and sugar are well-combined. Remove from heat; stir until the mixture stops bubbling. Stir in pecans. Spoon the mixture over the crackers. (Don't worry if all of the crackers are not completely covered. The mixture will spread during baking.) Bake uncovered for 8 minutes. Remove from the oven, and using a spatula, carefully transfer the cookies to a wire rack. (They should come apart in whole cookies.) Cut or break the pieces in half while still warm. Let cool 15 minutes (or up to 8 hours) and serve.
* Note: You may use 2 sticks of butter and omit the margarine if you prefer. We tested this using Honey Maid graham crackers, and 12 of them fit exactly in a 15-by-10-inch pan. If your pan is a different size, just use the number of crackers that fits. From Beverly Mills and Alicia Ross. -----

Cómo hacer pasta de pistachos casera
Les traigo esta riquísima receta de pasta de pistacho. Si bien las puedes conseguir fácilmente en tiendas de repostería, siempre digo que la mejor opción es hacerla de forma casera. El resultado es mucho más sabroso y cremoso. La puedes utilizar para saborizar buttercream, chantilly, ganache de chocolate y preparaciones de todo tipo!
INGREDIENTES EN GRAMOS
150 g de pistachos pelados
100 g de azúcar
50 g de aceite de girasol
Colorante verde a gusto
INGREDIENTES EN TAZAS
2 tazas de pistachos pelados
½ taza de azúcar
¼ taza de aceite de girasol
Colorante verde a gusto
PREPARACIÓN
1. Comenzar a pelar los pistachos, para esto poner a calentar agua y cuando rompa hervor apagar.
2. Colocar los pistachos dentro por 20 minutos y luego colar. (Así evitaremos que nuestra pasta luego tome un color marrón pálido.)
3. Con la ayuda de un paño de cocina retirar la cáscara de los pistachos y colocarlos en una bandeja de horno con un silpat.
4. Llevar a un horno a 160° C por 20 minutos o hasta que estén secos totalmente y reservar.
5. Realizar un caramelo colocando azúcar en una cacerola de fondo grueso y llevando a fuego sin mezclar, hasta que se derrita el azúcar por completo y cambie de color.
6. Cuando el azúcar esté completamente disuelta puedes revolver con la ayuda de una espátula para integrar bien.
7. Incorporar los pistachos al caramelo y revolver para luego volcar la preparación sobre un silpat hasta que la mezcla se enfríe.
8. Romper con la mano en pequeños pedazos y procesar los pistachos con el caramelo.
Agregar de a poco la mitad del aceite hasta obtener una pasta suave y homogénea.
9. Por último agregar el colorante para darle más color.
10. Colocar la preparación en un bowl y mixear para terminar de integrar y añadir el resto del aceite.
11. Mezclar hasta obtener una pasta sedosa y fina.
12. Conservar en un frasco hermético hasta tres meses fuera del refrigerador o dentro. Para su uso conviene tenerla a temperatura ambiente.
