Potato Chip Cookies
A lovely shortbread cookie with a slightly salty finish.

Potato Chip Cookies
Yield: 12 cookies
Preheat oven to 350℉
In a medium sized bowl, add:
3/4 cup all-purpose flour
50 grams (1/2 cup crushed) reduced fat Kettle style potato chips
1/4 teaspoon salt
Mix to incorporate the ingredients and set aside.
Add next three ingredients to the bowl of a stand mixer.
8 tablespoons of chilled butter, cut into 8 pieces
1/4 cup granulated sugar
1/4 cup confectionery sugar
Use the paddle attachment and beat on high speed to cream butter and sugars, about 3-4 minutes.
Turn mixer off, scrape the sides of the bowl, then add:
1 raw egg yolk
1 teaspoon vanilla extract
Beat until mixture is incorporated, about 30 seconds
Turn mixer off and begin to add the flour mixture in thirds. After each addition, turn the speed to the lowest setting. When the butter mixture absorbs the flour mix, add another third of the mix, then repeat.
Prep your cookie sheets with parchment paper or a silicone mat. Use a tablespoon, or scoop to portion out the dough. Leave a 3 inch space between the dough balls, they will spread when baked. Before placing them into the oven, gently press to slightly flatten the dough.
Bake at 350℉ for 10 to 13 minutes. Allow to cool slightly on the baking sheet before moving to a cooling rack.

Ingredients:
225g (250 mL / 1 cup) unsalted butter, at room temperature
200g (250 mL / 1cup) sugar
215g (250 mL / 1cup) packed light brown sugar
2 large eggs
5 mL (1 tsp) pure vanilla extract
315g (560 mL / 2¼ cups) all purpose flour
5 mL (1 tsp) baking soda
200g crushed salted potato chips
500 mL (2 cups) chocolate chips
Coarse sea salt for sprinkling
Method:
Preheat the oven to 180ºC (350°F).
Cream together the butter, sugar and brown sugar until light and fluffy.
Beat in the eggs one at a time.
Beat in the vanilla.
Mix together the flour and baking soda.
Stir the flour into the creamed mixture.
Stir in the chocolate chips and crushed potato chips.
Scoop the dough onto the baking sheets, then sprinkle the tops with some crushed potato chips and sea salt.
Bake about 10-12 minutes or until golden brown and just set.
Transfer to a cooling rack.
Makes about 50 cookies with the #50 scoop

This cookie proves that sweet and salty truly is a winning combination. I took a salty staple (potato chips) and combined them with a classic sweet (sugar cookies) just to verify the sweet/salty axiom. They did not disappoint.
If you've ever had the Compost Cookies at Momofuku Milk Bar in New York City, you'll understand the thinking behind this, although this version simplifies it.
The potato chips manages to hold their crunch dispersed among the soft cookies, and the pecans I added put another layer of wonderful texture in too.
I love the darker color and depth of flavor achieved by adding brown sugar to a typical sugar cookie recipe, so I did one part dark brown sugar and one part light brown sugar here. The hint of molasses is exceptional up against the potato chips and pecans. And then I had fun by added a tablespoon of coconut cream liquid rather than a teaspoon of vanilla extract.
Ingredients:
2 sticks butter, softened
1/2 cup dark brown sugar, 1/4 cup light-brown sugar
3/4 cup sugar
1 Tbsp coconut cream liquid (or you can use 1 tsp. vanilla extract)
2 large eggs
2 cups flour
1 teaspoon baking soda
3/4 teaspoon coarse salt
4 cups crushed potato chips (I used 2 cups regular potato chips and 2 cup purple potato chips)
1 cup pecans, chopped
Cream together butter and sugars with a mixer on high speed until fluffy. Add coconut cream and eggs, and beat until just combined.
Add flour, baking soda, and salt, and combine well. Stir in potato chips and the nuts.
Roll dough into balls and place cookies baking sheet (lined with parchment paper or a Silpat liner). Bake until golden, 18 to 20 minutes. Let cool completely on baking sheet.
