How To make Poached Filets Mignons with Horseradish Sauce
4 center-cut filets mignons -- fully trimmed
1 cup veal demiglace
1 cup water
2 tablespoons dijon mustard
2 tablespoons bottled horseradish
Accompaniment: Butternut Squash, Turnip, and Green-Bean Quinoa (see recipe)
Season filets with salt and pepper.
In a 2-quart saucepan heat demiglace and water just to a simmer and add steak. Add some boiling water to mixture if necessary to make enough liquid to just c over steak. Poach steak at a bare simmer (meat will toughen if liquid is allow ed to boil), without turning, 8 minutes and remove from broth. Boil broth over high heat until reduced to about 1/2 cup and stir in mustard and horseradish. Keep sauce warm over low heat and halve steaks horizontally.
Mound quinoa mixture on 1 side of 4 large plates and arrange 2 slices steak alo ngside. Spoon sauce over steak.

Beef Tenderloin Bites Ep.74

Recipe:
- Horseradish sauce:
- In a bowl add:
- 1 Tbs. of mayonnaise
- 1 Tbs. of horseradish
- 1 dash of Worcestershire sauce- to taste
- Cover and keep chilled in the refrigerator
-Two 6oz. beef tenderloin fillets cut into 1/4 slices
- 1 egg well beaten, set aside
- In a bowl add :
- 3/4 cup of grated parmesan cheese
- 1 tsp. of granulated garlic powder
- 1 tsp. of onion powder
- 1/2 tsp. of salt
- 1/2 tsp. of pepper
- Mix all well
- Dip slices of beef into beaten egg
- Roll in the seasoned parmesan to completely coat the beef tenderloin
- In a pan on medium to high heat add 2 tsp. of each vegetable oil and butter
- Cook 1-1/2 minutes on each side
- Remove from pan and pat dry with paper towels
I like to serve them on a bed of chopped arugula with a bowl of the horseradish sauce in the centre. I hope you enjoy my Beef Tenderloin Bites! Thanks for watching.

Bearnaise sauce ingredients (approximately 4 portions):
✔️ 2 egg yolks
✔️ 2-3 tbs water
✔️ 70 ml / 2.4 fl oz white vinegar
✔️ small shallot
✔️ 2 stalks of tarragon
✔️ 3-4 stalks of parsley
✔️ 1 tbs peppercorn
✔️ 125 g / 4.4 oz butter
✔️ salt
