How To make Pistachio Butter Cookies
1 cup Butter
room temp
1 cup Sugar
1 Egg yolk
1 tablespoon Whipping cream
1/2 teaspoon Vanilla
2 cups Flour
1/2 cup Pistachio nuts :
finely chop
OR- walnuts -- finely chop
Cream butter in mixing bowl. Gradually add sugar, beating until light and fluffy. Beat in egg yolk. Add cream and vanilla, mixing well. Stir in flour. Mix until blended. Spoon mixture into a pastry bag with a large open star, 3/4" diameter tip, filling bag half full (or use cookie press). Onto ungreased baking sheets, pipe out cookies, 2" apart. Sprinkle with nuts. Bake at 350~ for 15 minutes. Remove cookies to racks for complete cooling.

Ingredients:
For the cookie dough:
1/4 cup (60g) Pistachio paste
3/4 cup (175g) Softened Butter, unsalted
2 eggs
3/4 cup (150g) Brown sugar
1/4 cup (50g) white sugar
1 teaspoon Vanilla extract
2¾ cups (340g) Flour
1 teaspoon Baking soda
1/4 teaspoon Salt
For the filling:
1/3 cup (80g) Pistachio paste
180g White chocolate
For topping:
Chopped pistachios (optional)
Directions:
1. Make the filling: chop white chocolate, place in a heatproof bowl, add pistachio paste. Melt and mix until combined and smooth.
2. Place the bowl in the fridge for 30 minutes, them scoop about 1 teaspoon each time and shape a bowl. place on a plate and freeze while making the dough.
3. Make the cookie dough: In a large bowl, beat butter, pistachio paste, brown sugar and white sugar. Beat until creamy, about 2 minutes. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
4. Sift in flour, baking soda, salt. Mix until combined.
5. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
6. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
7. Scoop out about 1-2 tablespoons of cookie dough and flatten it, place frozen pistachio filling in the center, roll into a ball.
8. Place rolled balls on a parchment paper with about 2 inches apart. Top each cookie with chopped pistachios (optional).
9. Bake for 10-12 minutes or until lightly browned on the sides.
10. Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.

recipe:
1 2/3 cups all purpose flour
1 box of 3.4 oz box instant pistachio pudding mix
1/2 salt
1 tsp baking soda
mix all these ingredients in a bowl
in a separate bowl combine the following ingredients:
1/4 cup brown sugar
3/4 cup granulated sugar
3/4 cup softened unsalted butter
1 tsp clear vanilla
1 egg
1 cup white chocolate chips
1/2 cup chopped pistachio
optional* green food color
**If you use regular pure vanilla extract it will turn the cookie dough brown**

@ Nora’s International Cooking Cranberry pistachio cookies, shortbread, for that you need
 2 1/2 cups all purpose flour 370 g 
 10 ounce unsalted butter at room temperature
 One medium egg at room temperature
 137 g pistachio
 137 g cranberries
170 g sugar
Half a teaspoon salt
Half a teaspoon baking powder
One orange zest
2 tablespoons orange juice
1 tablespoon Flour to dust the cranberries
Dough must be refrigerated at least two hours before baking

• 1/2cup - 140g Pistachio Spread for piping in the holes
• 1/4 cup - 30g Chopped Pistachios

Pistachio Cookies Dough
1. In a bowl, whisk the egg and pistachio spread
2. Add in the flour and mix until it forms a dough
3. Cover and refrigerate for 15 minutes
Pistachio Cookies Balls
1. Roll the dough into 18g balls
2. Place on a baking sheet
3. Press your fingers at the center of each ball
4. Fill a pastry bag with the spread
5. Pipe a good amount in each hole
6. Add the chopped pistachios
Bake Your Goodies!
1. Bake at 350F for 10 minutes
2. Let them cool down
3. Enjoy!
