PINEAPPLE FRIED RICE RECIPE:
2 cups fresh pineapples, cut into 1/2 inch chunks
1/2 a bell pepper, diced
1 stalk green onion
2 cloves garlic, minced
1 teaspoon red curry paste
1 cup protein of choice
3 cups day-old rice
1 tablespoon fish sauce
2 teaspoons soy sauce
1/4 cup roasted cashews
In a large wok, heat up with a drizzle of oil. Let it get hot and add in the curry paste. If cooking with chicken, add the chicken cut into small pieces, and stir fry for 4-5 minutes until cooked through. If using shrimp, cook for a minute until pink and remove / set aside. If cooking shrimp and chicken, then leave in and add the pineapples, bell pepper, garlic, and green onion.
Nestle the shrimp on top of the veggies to slow down the cooking process.
Once the pineapple starts to caramelize for (about 3 minutes), add the cold rice and break it up a bit. Add the fish sauce and soy sauce, the cashews, mix well and serve.

Ingredients:
1 ripe pineapple
75g extra firm tofu
1/2 red onion
2 pieces garlic
small piece ginger
1/4 cup peanuts
3 tbsp chili oil (
1 cup cooked rice
2 tsp curry powder
1/2 tbsp soy sauce
1 tsp dark soy sauce
1/2 tsp toasted sesame oil
1/4 cayenne pepper
few sprigs cilantro
Directions:
1. Slice the ripe pineapple in half and scoop out the inside meat, leaving the shell intact to use as the final serving bowl
2. Remove the pineapple core (use in smoothies!) and chop the meat into bite sized pieces preserving as much juice as possible
3. Broil the pineapple bowls in the oven for 3-4mins (bowl side up)
4. Chop the extra firm tofu into small cubes. Finely chop the red onion, garlic, and ginger
5. Heat up a nonstick pan to medium heat. Add the peanuts and toast for 2-3mins, then set aside
6. Heat the pan back to medium heat and add the chili oil followed by the red onions. Sauté for 3-4mins
7. Add the garlic, ginger, and tofu. Sauté for 2-3mins. Then, add the cooked rice, pineapple pieces, curry powder, soy sauce, dark soy sauce, toasted sesame oil, about 2 tbsp of juice from the pineapple, and cayenne pepper. Sauté for another 3-4mins
8. Add the toasted peanuts and give the pan a good mix. Plate the fried rice in the pineapple bowls and garnish with freshly chopped cilantro to serve

Ingredients :
Rice (cooked) - 4 cups
Oil - 2 tbsp + 2 tbsp
Garlic - 3 cloves
Shallots (sliced) - 15 nos
Egg - 3 nos
Red Chilli (chopped) - 2 nos
Carrot (finely chopped) - 1 no
Green Peas - ¼ cup
Soy Sauce - 1 tsp
Salt - ½ tsp
Black Pepper Powder - A pinch
Lemongrass (finely chopped) - 1 tbsp
Pineapple (diced) - ½ cup
Spring Onion (chopped) - For Garnish
Sesame Seeds (toasted)6For Garnish
Instructions:
1. Heat Oil in wok, add the beaten egg and scramble till it becomes fluffy.
2. Add garlic, lemongrass, shallots and red chillies. Saute them for a few seconds on a high flame.
3. Add the carrot, green peas and toss them for a few seconds on a high flame.
4. Add the cold rice, toss it till all the ingredients evenly combine.
5. Add soy sauce, salt, pepper and toss it till all the ingredients combine evenly.
6. Finally add the diced pineapple, toss it for a few seconds on a high flame.
7. Transfer it to a plate, garnish it with spring onion and toasted sesame seeds. Serve it hot.

Thai Basil Pineapple Fried Rice - Thai/ Fried Rice Recipes by Archana's Kitchen
Thai Basil Vegetarian Fried Rice is a delicious preparation of rice that is made spicy with thai red chillies. This is a dish that can be incorporated with a variety of flavors with lots of room for experimentation and adaptation.
I have tailored this dish to suit the palates that my family likes. The use of Thai Red chillies and Thai Basil Leaves is an absolute must has this really kicks up the heat and flavor of the dish. You can serve the Thai Basil Fried Rice along with Malaysian Vegetable Curry for dinner or as a party food with friends and family.
You can experiment with vegetables, mushrooms, scrambled eggs, pineapple or any other ingredient. I typically use a short grain rice for making asian rice. Since Jasmine sticky rice is not readily available in the Indian markets, I used a regular short grain rice to make this dish. This is a great handy dish, as it can be prepared from left over rice. if you have the sauces in stock, you can throw in some vegetables, stir fry in the wok and viola your rice is ready.
