CHICKEN CHANGEZI
Preparation time 5-10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Chicken Marination
900 gms Chicken (thigh & drumstick) चिकन
2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
2 heaped tbsp Curd, beaten, दही
1 tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
For Onion Masala
Oil for shallow fry, तलने के लिए तेल
4 medium Onions, sliced, प्याज
6-7 Cashew Nuts, काजू
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
For Cooking Chicken
2-4 tbsp Fried onion oil, तले हुए प्याज का तेल
Marinated chicken, मैरिनेटेड चिकन
For Chicken Changezi
2 tbsp Fried onion oil, तले हुए प्याज का तेल
1 no. Black Cardamom, बड़ी इलायची
2-4 no. Cloves, लौंग
1 inch Cinnamon stick, दालचीनी
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 no. Green chili (less spicy & broken into half) हरी मिर्च
1 cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
Prepared Onion Masala, तैयार किया हुआ प्याज मसाला
2 tbsp Curd, beaten, दही
1 ½ tsp Coriander powder, धनिया पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Cumin powder, जीरा पाउडर
Cooked Chicken, पका हुआ चिकन
⅓ cup Water, पानी
For Garnish
Coriander sprig, धनिया पत्ता
For Chicken Marination
In a bowl, add chicken, ginger garlic paste, salt to taste, curd, turmeric powder, degi red chili powder, coriander powder and mix everything well.
Keep it aside for further use.
For Onion Masala
In a shallow pan, add oil, once it's hot, add onion and shallow fry on medium flame for 3-4 minutes until translucent, transfer it into a tray.
Add cashew nuts into the same pan and fry for 1-2 minutes on low flame and transfer it to the tray.
Add degi red chili powder, turmeric powder, coriander powder and salt to taste.
Transfer it into a grinder jar and make a coarse paste.
Keep it aside for further use.
For Cooking Chicken
In a shallow pan or tawa, add fried onion oil, once it's hot, place marinated chicken into the oil.
Shallow fry the chicken for 7-8 minutes on medium flame or until tender.
Transfer it onto a plate and keep it aside for further use.
For Chicken Changezi
In the same pan or tawa, add fried onion oil, once it's hot, add black cardamom, cloves, cinnamon stick and let it splutter.
Add ginger garlic paste, green chili and saute on medium flame.
Add fresh tomato puree and let it cook for 4-5 minutes.
Once the tomato puree is cooked, add prepared onion masala and saute it well on medium flame.
Add curd, coriander powder, degi red chili powder, cumin powder and saute well.
Add cooked chicken and mix well, add water and let it cook for 5-6 minutes on medium flame.
Transfer it onto a serving dish and garnish it with coriander sprig.
Serve hot with roti.

Ingredients for Chicken Handi :
- Boneless Chicken, cut into cubes- 500 gms
- Ginger Garlic paste- 2 tsp
- Salt- 1 tsp
- Onions, fine chopped- 1 big (100 gms)
- Tomatoes, chopped- 4 small (200 gms)
- Green Chillies, cut into big pieces - 3 nos
- Ginger, julienned- 1 tbsp
- Coriander, chopped for garnish- 3 tbsp
Other Ingredients:
- Cumin seeds- 3/4 tsp
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1 tsp
- Coriander Powder- 1 tsp
- Garam Masala Powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Crushed Black Pepper- 1/4 tsp
- Dry Fenugreek Leaves, dry roasted & powdered- 1 tsp
- Whisked Curd or Yogurt- 2 tbsp
- Fresh Cream- 4 tbsp
- Oil- 4 tbsp
Preparation:
- Clean & wash the chicken fillets and pat dry. Cut into one inch cubes.
- Chop the onion, tomatoes and coriander leaves, julienned the ginger and cut the 3 green chillies into small pieces.
- Dry roast and powder the Kasuri Methi (Dry Fenugreek leaves), set aside.
Process:
- Heat 2 tbsp oil in a flat pan and add the ginger garlic paste. Fry on low heat for 1 minute and add the chicken cubes along with 1 tsp salt. Mix and fry on high to medium heat for 3-4 mins. Take it out and set aside.
- Heat 2 tbsp oil in the same pan and add the chopped onions. Fry on medium heat for 5-6 mins till light brown.
- Add the chopped tomatoes & 1/4 tsp salt and cook on medium heat for 3-4 mins till soft.
- Now add the Turmeric, Red Chilli and Coriander powders, mix and add a splash of water.
- Continue to cook for around 3 mins on medium to low heat till oil separates.
- Add the fried chicken cubes and fry on medium heat for 5 mins till water dries up and oil separates.
- Now switch off heat and add the whisked curd/ yogurt. Mix well and cook on low heat for 2 mins till oil separates.
- Add 50 ml water, mix well and cook covered on low heat for 10 mins till the chicken is tender and oil separates.
- Now add the crushed black pepper, garam masala powder and roasted & powdered Kasuri Methi. Mix well and cook for another 2-3 mins.
- Now add the green chilli pieces and ginger juliennes, give a mix and then add the fresh cream. You can add few tablespoons water if required.
- Give a mix and simmer for 2-3 mins till oil separates.
- Garnish with chopped coriander.
