How To make Meatless Red Beans and Rice
1 1/8 cups dry red beans or dry red kidney beans (1/2 lb.)
3 cups water
1/2 cup chopped onion
2 cloves garlic, minced
1 bay leaf
3/4 tsp. salt
1/2 tsp. fennel seed, crushed
1/4 to 1/2 tsp. ground red pepper
3 cups water
2 cups hot cooked rice
Rinse beans. In a large saucepan combine beans and the 3 cups water. Bring to boiling; reduce heat. Simmer for 2 minutes. Remove from heat. Cover and let stand 1 hour. (Or, soak by placing beans and the 3 cups water in a bowl. Cover and set in a cool place for 6 to 8 hours or overnight.)
Drain beans in a colander and rinse. Return beans to the saucepan. Stir in onion, garlic, bay leaf, salt, fennel seed, red pepper, and 3 cups fresh water. Bring to boiling; reduce heat. Cover and simmer about 2 1/2 hours or till beans are tender, adding more water, if necessary, and stirring occasionally.
Uncover and simmer, stirring occasionally, for 15 to 20 minutes more or till a thick gravy forms. Discard bay leaf. Serve over rice.

Vegan Red Beans and Rice // EASY OIL FREE PLANT BASED DINNER RECIPE
Red Beans and Rice
SERVES 4
¼ cup water
1 large yellow onion, finely chopped
3 jumbo garlic cloves, finely chopped
3 celery stalks, finely chopped
1 green bell pepper, finely chopped
1 heaping tablespoon miso paste
2 teaspoons smoked paprika
1 teaspoon sweet paprika
1 teaspoon onion powder
1 teaspoon garlic powder
½ to 1 teaspoon ground cayenne, plus more to taste
1 teaspoon soy sauce
1 tablespoon tomato paste
1 teaspoon dried thyme
2 cans red kidney beans, drained and rinsed
2 cups water
3 dried bay leaves
Cooked brown rice, for serving
Hot sauce, for serving
Heat 1/4 cup of water in a heavy bottomed stock pot. Water sauté the chopped garlic until translucent. Add the celery, bell pepper, miso, paprika, smoked paprika, onion powder, garlic powder, cayenne, soy sauce and tomato paste. Cook for 5 more minutes on low.
Add the kidney beans, 2 cups of water and bay leaves. Stir well.
Cook for about 30 minutes or until the bean cooking liquid has thickened up.
Serve with the cooked rice and hot sauce.

Recipe:
- 4 cups dried red beans (soak the beans in water according to the direction on the bag)
- white rice
- 1 bell pepper
- two white onions
- 4 celery stalks
- sausage or tofurkey
- 2 ts. dried oregeno leaves
- 2 ts. garlic powder
- 2 ts. thyme
- 2 ts. salt
- 1 ts. white pepper
- 1 ts. black pepper
- 1 ts. cayenne pepper
- canola oil

Ingredients
Rajma - 200 gms (soaked overnight)
Water
Ghee - 3 Tsp
Whole spices
(Cinnamon, Clove, Cardamom, Star Anise, Mace & Bay leaf)
Onion - 2 nos thinly sliced
Green Chili - 3 nos slit
Ginger garlic paste -1 Tsp
Tomato - 2 nos chopped
Salt to taste
Turmeric powder - 1/4 Tsp
Chili powder - 2 Tsp
Garam masala - 1/2 Tsp
Juice of 1 lemon
Coriander leaves
Water - 3/4 cup
Basmati Rice - 1 cup (soaked 15 mins)

Method
Soak the rajma overnight
Pressure cook the rajma for 4-5 whistles
Soak the basmati rice for 15 mins
In a pressure cooker, add ghee, add the whole spices and roast them
Add onions, green chilies and saute them
Add ginger garlic paste and saute
Add tomatoes and saute
Add red chili powder, turmeric powder, salt and mix well
Add the cooked rajma beans
Add 1/2 tsp of garam masala, lemon juice, coriander leaves and mix everything well
Add a cup of cooked rajma beans water, add 3/4th cup of fresh water
Add soaked basmati rice and mix well
Pressure cook for 2 whistles on medium flame
Serve the Rajma Pulao hot with some raita
