How To make Meatless Bulgur Filled Tamales
1 Recipe Basic Masa Dough
see recipe 18 Corn husks or parchment
:
papers FILLING:
1 c Bulgur wheat, uncooked
8 Tomatoes, sun dried, minced
1/4 c Onion, dried
2 3/4 c Boiling water
4 tb Miso, brown rice
2 tb Arrowroot powder
To make filling: a. In a medium sized mixing bowl, combine bulgur, tomatoes, pepper and onion. b. Add boiling water. Stir and cover with a dinner plate. Let sit for 15 minutes. c. Add miso and arrowroot, stirring thoroughly. d. Fill and cook tamales acording to "Tamales Basic Procedure". (See recipe). Per serving: (2 tamales) 384 cal, 4 g prot, 420 mg sod, 81 g carb, 3 g. fat 0 mg chol, 17 mg calcium From _Vegetarian Gourmet_ Summer 1993

What I Ate In A Day As A Vegan! Hi guys in this video I share simple, healthy recipes that I like to eat during the weekdays.

*Matcha Latte*
1 tsp Matcha Tea Powder
1/2 Cup warm water
2/3 Cup hot/cold Plant based milk (I used unsweetened almond milk)
1 Tsp of Maple syrup
*Mix matcha powder with water then pour into mug, add milk and sweeten to taste. I used a hand frother for a foamy texture.
*Medjool Dates*
3 Pitted medjool dates, cut in half.
Peanut Butter to taste
Nuts of choice
*Add enough peanut butter to fill each date half. Top each date with
chopped pecans.
*Juicing*
(Used Omega Juicer)
4 Carrots
2 Celery sticks
1 Cucumber
3 Apples
Pineapple
Ginger
Romaine Lettuce
1 Beet + Beet Leaves
Juice all vegetables and fruit. Pour any leftovers in a mason jar and place in the refrigerator to preserve for 1 day or 2.
Made 5 1/2 Cups
*Avocado Toast*
1 slice of Vegan bread, toasted
half an avocado
Cucumber
Tomato
Red Onion
*Toast bread, mash avocado and spread onto bread. Add slices of Red onion, cucumber and tomato. Sprinkle Everything but the bagel seasoning from Trader Joe's. I also added Tapatio hot sauce.
*Chickpea Tuna*
2 Cans of Chickpeas, drained
*Chickpea Citrus Dressing*
1/2 Cup Chickpeas
2 garlic cloves
1/2 tsp Himalayan pink salt
1 Serrano pepper
Wedge of onion
2 tbsp of water or more if the dressing is too thick.
1/2 tsp fresh squeezed lime juice
Blend until smooth, adjust salt to taste. Set aside
Pulse the remaining Chickpeas until you get your desired tuna texture. Place in a large bowl.
Vegetables
2 Cups chopped tomatoes
1 Cup chopped Red onion
Sprig of diced Cilantro
1 Finely chopped Serrano pepper (Optional)
*Mix in all of the vegetables with pulsed chickpeas, add the citrus dressing, stir.
Adjust seasonings to taste.
1 tsp of onion powder
1/2 tsp of garlic powder
Pinch of salt
Serve your vegan tuna salad with tostadas and avocado chunks.
*Heathy Vegan Fresas Con Crema*
6 sliced Strawberries
1/2 of a banana, sliced
1/4 Cup Vegan plain yogurt (I used Silk's Plain Soy Yogurt)
2 Tsp of Maple syrup + more to taste
1/2 tsp of chia seeds
Mix the maple syrup and yogurt together. Pour sweet yogurt over sliced strawberries and bananas, mix well then sprinkle chia seeds over the fruit.
