How To make Lentil Vegetable Stew

sherry

onion, chopped

carrots, shredded

potato, sweet, peeled, diced

bell pepper, red, diced

garlic, cloves, chopped

lentils, dry

cup
vegetable broth, very hot

teaspoon
cumin
1
teaspoon
curry powder
1/4
teaspoon
cinnamon
1
salt, to taste
1
pepper, to taste
Directions:
In skillet over medium-high heat, bring sherry to simmering. Add onion and saute 2 minutes. Add carrots, sweet potato, bell pepper and garlic; saute 1 minute or until sherry has evaportated. Spoon into slow cooker.
Add remaining ingredients except salt and pepper. Cover and cook on low 8-10 hours, until lentils are very soft and stew is thick. salt and pepper to taste. Serve with a fragrant rice, such as basmati or jasmine.
Per serving: 156 cals; 8 gm prot; .3 gm fat; 29 gm carb; 0 chol; 12 mg sod; 4 gm fiber.

This recipe is made with simple ingredients, excellent for weeknight dinners and meal prep, and a healthy and wholesome homemade meal.

2 tablespoons extra virgin olive oil
2 carrots
1 onion
1 stalk celery
1 teaspoon cumin
4 cloves garlic
6 cups vegetable broth
2 cans (15-ounce each) diced tomatoes
1 cup lentils uncooked, green or brown
1 teaspoon thyme dried
1 teaspoon oregano dried
1½ teaspoons salt or more to taste
¼ teaspoon black pepper or red pepper flakes
5 ounces spinach (about 4 to 5 cups)
Metric:
2 tablespoons extra virgin olive oil
2 carrots
1 onion
1 stalk celery
1 teaspoon cumin
4 cloves garlic
1,5 liters vegetable broth
800 grams diced tomatoes
220 grams lentils uncooked, green or brown
1 teaspoon thyme dried
1 teaspoon oregano dried
1½ teaspoons salt or more to taste
¼ teaspoon black pepper or red pepper flakes
150 grams spinach (about 4 to 5 cups)

1 (28oz) Fire Roasted Diced Tomatoes
1 cup Lentils
4 cups Veggie Broth
2 cups Water
2 cups Chopped Collard Greens
Salt & Pepper to taste
1-2 tbsp Lemon Juice (squeeze in after done)
2-3 tsp Smoked Paprika
1/2 - 1 tsp Red Pepper Flakes
1-2 tsp Lawrys Season Salt
Bring to boil...
Cock lid on and cut down to simmer...
Cook 25-30 mins until lentils are tender but still hold shape.
