How To make Lemon Cinnamon Cookies
4 c All-purpose flour
2 c Granulated sugar
1 tb Ground cinnamon
2 ts Pulverized baking ammonia
(sold at pharmacies (or 1 tsp cream of tartar (mixed with 1 tsp baking -soda 1/2 ts Salt
1 c Butter
3 Eggs; beaten
2 ts Lemon peel; finely shredded
1 Egg white
1 tb Water
Pearl sugar; or regular -sugar 4 oz Semisweet chocolate
Melted/optional Recipe by: Midwest Living, December 1994 Preheat oven to 375 degrees. In a very large mixing bowl, stir together the flour, sugar, cinnamon, baking ammonia and salt. Cut in the butter until the mixture resembles coarse meal. Add the eggs and lemon peel; mix well to form a dough. On a floured surface, roll out the dough to 1/8-inch thickness. Cut into shapes with 2 ro 3-inch cookie cutters. Place
the cutouts on ungreased cookie sheets. Combine the egg white and water; brush over the tops of the cookies. Sprinkle with sugar. Bake for 8 to 10 minutes, or until golden. Remove to a wire rack to cool. Drizzle with melted chocolate, if you like. Makes 60 to 84 cookies. Penny Halsey Note: To spread out your baking tasks, you can mix up the dough one day and chill it overnight. Then, roll out and bake the cookies the next day. You can store baked cookies in the freezer for up to 6 months. -----

EGGLESS WHEAT CINNAMON COOKIES
Ingredients
1¼ cups whole wheat flour
½ cup butter
¼ cup + 1 tablespoon castor sugar
1 teaspoon vanilla essence
¼ teaspoon nutmeg powder
½ teaspoon + ¼ teaspoon cinnamon powder
1½ tablespoons milk
Method
1. Whisk butter in a bowl using an electric beater till smooth. Add ¼ cup castor sugar and whisk till light. Add vanilla essence and whisk.
2. Sift together wheat flour, nutmeg powder and ½ teaspoon cinnamon powder and mix well. Add milk and mix till well combined into a dough. Refrigerate for 15-20 minutes.
3. Mix together remaining castor sugar and remaining cinnamon on a plate.
4. Preheat oven to 180˚ C.
5. Roll out the dough into ½ cm thick sheet and cut into roundels using a medium size cookie cutter.
6. Place the cookies on a baking tray and sprinkle some cinnamon-sugar on top.
7. Put the tray into the preheated oven and bake for 10-15 minutes. Remove from oven and cool.
8. Serve.

RECIPE:
For the dough:
♥ 1 Egg white (medium size egg)
♥ 1 tsp Lemon Juice
♥ 100 g (1/2 cup + 3 Tbsp) Icing Sugar
♥ 200 g (2 cups packed) Almond Flour or chopped almonds
♥ A sachet of Vanillin or vanilla bean seeds
♥ 3 g (2 tsp) Ground Cinnamon
♥ 1/2 tsp Ground Ginger
♥ A pinch of Clove powder
♥ A pinch of Salt
For the Icing:
♥ 30 g Egg White (small size egg)
♥ 1 tsp Lemon Juice
♥ 150 g (1 cup) Icing Sugar
Bake in a preheated oven at 170 ℃ (340 °F) for about 15 - 18 minutes

Cinnamon Roll Sugar Cookies
Yield: 2 dozen
INGREDIENTS
1 1/4 Cup (250g) sugar
8 Tbsp (120g) softened butter (1 stick)
2 large eggs
1 tsp (5mL) vanilla extract
1/2 Cup (120g) sour cream
3 1/2 Cups (420 g) flour, plus ½ cup (60g) for rolling out dough
1 tsp (5g) baking soda
1 tsp (5g) baking powder
1/4 tsp (2g) salt
8 Tbsp (120g) softened butter
1 cup (180g) of brown sugar
2 tsp (10g) ground cinnamon
FROSTING:
8 oz softened cream cheese
1 Cup (100g) powdered sugar
2-4 Tbsp (30mL-60mL) milk
DIRECTIONS
1. In an electric or stand mixer, cream the sugar and butter together. Add eggs, baking soda, baking powder, vanilla and sour cream until well combined. Slowly add in the 3 ½ cups of flour and salt until well combined.
2. Place in plastic wrap in a disc shape and chill for at least 2 hours for best results.
3. Once chilled, cut the dough in two, sprinkle some flour on your surface and rolling pin so as not to stick, and roll into an 1/8 inch thick rectangle. NOTE: You may want to pick up the dough and re flour the bottom surface to make sure it doesn’t stick to your surface from the pressure of the rolling pin.
4. Combine the cinnamon and brown sugar together and give it a mix with a fork to combine the ingredients.
5. Spread each rolled piece of dough with 4 Tablespoons melted butter and half of the brown sugar and cinnamon mixture, spreading it evenly over the entire surface, leaving ¼ inch at the top of your dough rectangle, so that the end of the dough can attach easily to the other dough once it is rolled. NOTE: do not forget to spread the sugar fully to the other 3 edges though.
5. Start rolling from the long end closest to you, rolling into a log shape. Spread a little more of the melted butter at the end of your dough rectangle, (where there is no cinnamon and sugar) so that the end sticks easily to the rest of the dough.
6. Using a sharp knife, cut 1/2 inch pieces of dough. Then place each piece onto a baking sheet lined with wax paper or sprayed with baking spray.
7. Bake at 350 degrees for about 10 minutes. Remove and let cool for 5 minutes before removing from baking sheet.
8. To prepare the frosting, beat the cream cheese until softened and smooth, slowly add powdered sugar and milk until desired consistency is achieved. Frost the cookies with a knife or piping bag fitted with a small round tip (to achieve icing lines) no more than 4 hours before you are ready to serve. If you don’t want to eat them right away, place them in a covered container in the refrigerator (because of the cream cheese frosting) or wait to ice them until you are ready to serve.
