This pie is sure to please because it's full of sweet lemon flavor. Easy to prepare. My grandmother taught me to add cornmeal, which makes for a fantastic pie. We always had the ingredients on hand because they were staples for a lot of our meals.

You can decrease the sugar from 2 cups to 1-1/2 cup. And, you can decrease the flour to 1/2 or 1 tbsps if you want a filling that is closer to the consistency of pudding.
Here's the recipe:
Preheat oven to 350 degrees F.
Fills two 8 deep dish or two 9 regular pie shells.
Zest one lemon rind before cutting the lemon and squeezing and measuring into 1/4 c. Strain lemon juice to separate it from the seeds and pulp. TIP to keep pie crust from sticking to the pan: (1) Homemade pie crust: Spray the pie shell dish with Pam. (2) Store-bought pie crust: Flip the frozen crust out of the foil pan onto the counter. Spray the foil pan with Pam, then place the shell back into the pan.
5 large eggs
2 c. sugar
1/2 c. (1 stick) butter
1/2 c. evaporated milk
1/2 c. lemon juice (1/4 c. fresh squeezed + 1/4 c. Real Lemon brand juice)
1-2 tbsp flour (depends on how firm you want your pie)
3 or 4 tbsp cornmeal (depends on how firm you want your pie)
1/2 tsp salt
Zest of one lemon rind
In a large bowl, beat eggs.
Add sugar, butter, milk to eggs and beat well.
Add cornmeal, flour, salt, lemon zest and beat well.
Add lemon juice and mix well.
Cover the edge of the pie shells with foil so the edges of the crust won't burn or get too brown.
Pour filling into pie shells.
Bake at 350 degrees F for 30 minutes.
Reduce heat to 325 degrees F and cook for about 25 more minutes.
Pie is done when a fork inserted in the middle comes out clean.
Let pie cool before cutting. Enjoy.

???? True 'Old South' Buttermilk Chess Pie
A cross between an Old Fashioned Southern Buttermilk Pie, and a Southern Chess Pie.. It's all South and full of flavour!
Ingredients:
450g (2 ¼ cups) sugar
30 mL (2 Tbsp) cornmeal
45 mL (3 Tbsp) all purpose flour
175 mL (¾ cup) butter, melted
175 mL (¾ cup) buttermilk
6 large egs
15 mL (1 Tbsp) pure vanilla extract
Zest from one lemon
Juice of ½ of a lemon
1 9½” deep dish unbaked pie shell
Method
Preheat oven to 190ºC (375ºF).
Whisk together the sugar, cornmeal, and flour.
Beat the eggs into the sugar mix.
To that add the butter, buttermilk, and vanilla & mix.
Stir in lemon zest and juice.
Pour mixture into the pie shell.
Bake at 375ºF for 40-45 minutes until golden brown and set.

Lemon Chess Pie has the perfect balance of sweet and tart. The Chess Pie is a custard type pie and has a different texture from that of the gelatinous Lemon Meringue Pie. A quick pie to make and can also be frozen...remove from freezer to the refrigerator to thaw overnight.

PIE FILLING INGREDIENTS
1 2/3 Cups Granulated Sugar
1/2 Tsp Salt
1 TBSP Yellow Cornmeal
1 1/2 TBSP Corn Starch (or 3 TBSP Flour)
6 TBSP Melted Butter
3/4 Cup Lemon Juice (juice of about 3 Large Lemons)
5 Large Eggs
Pinch of Lemon Zest, optional

1/4 teaspoon salt
1/4 cup milk
1/4 cup unsalted butter, melted
1/4 cup lemon juice
4 large eggs, beaten
2 teaspoons grated lemon zest
1 deep dish pie crust, unbaked
Preheat the oven to 350 F.
In a large bowl, mix together the sugar, flour, corn meal & salt.
In a separate bowl, mix together the milk, butter, lemon juice, eggs & lemon zest.
Pour the liquid ingredients into the dry ingredients & mix well.
Pour the mixture into the crust & bake for 1 hour.
Refrigerate for at least 1 hour before serving.
