How To make Coconut Chess Pie
4 Eggs; beaten
1 1/2 c Sugar
1/2 c Butter; melted
1 tb Vinegar
1 ts Vanilla
1/2 ts Salt
1 c Coconut; flaked
1 Pie shell, 9", partially
-baked Toasted flaked coconut (OPT) Combine first 6 ingredients. Beat well. Stir in 1 cup coconut; pour into partially baked pie shell. Bake at 325~ for 45 to 50 minutes or until set. Cool on wire rack. Garnish with toasted coconut. From Southern Living, Sept. 1986. -----

Easy recipe for Chess Pie. So delicious! This is a standard Southern favorite. My mom passed away recently, and she loved this pie recipe so much. I feel closer to her somehow when I make it. Easy Chess Pie
1 pie shell
1 stick butter, melted
1 1/2 cups sugar
3 well beaten eggs
1 tablespoon corn meal
1 tablespoon vinegar
1 tablespoon vanilla
Preheat oven to 300 degrees F. Place pie shell into pie dish and set aside. Mix all other ingredients in a medium size mixing bowl. No need to use electric mixer. Just mix by hand. Pour into unbaked pie shell. Bake in 300 degree F oven for 45-50 minutes or until set in the center. Cool. Slice into 8 equal pieces. Delicious served with a dollop of whipped cream or a sprinkle of confectioner's sugar.
OPTIONAL:
Chocolate Chess Pie: Add in 3 Tablespoons cocoa
Coconut Chess Pie: Add in 3/4 to 1 cup shredded coconut
Lemon Chess Pie: Add in the juice of 2 large lemons

1 cup coconut
Deep dish pie shell
Combine all ingredients except coconut. Beat well, stir in coconut last. Pour in pie shell. Bake at 350 degrees for 45 or 50 minutes.

How To Make Old Fashioned Buttermilk Chess Pie
A cross between a Southern buttermilk pie, and a Southern chess pie.. It's all south and full of flavour!

Ingredients
1½ cups sugar
1 tablespoon cornmeal
2 tablespoons AP flour
Pinch of salt
½ cup of butter, melted
½ cup of buttermilk
2 teaspoons vanilla
4 large eggs
Zest from one lemon
Juice of ½ of a lemon
1 9 unbaked pie shell (regular depth)
Method
Preheat oven to 350ºF.
Whisk together the sugar, cornmeal, flour and salt.
To that add the butter, buttermilk, and vanilla & mix.
Beat the eggs, and add to sugar mix.
Stir in lemon zest and juice.
Pour mixture into the pie shell.
Bake at 350ºF for 30-35 minutes until golden brown and set.
