Water or Chicken Broth (Bouillon of choice)

Kid Friendly Huevos Rancheros/ Cowboy Eggs
2-3 Slices of Bacon or hot dog Winnies
1 Blended Tomato
1/4 Chopped Onion
1/2-1 Roasted Anaheim Pepper or Poblano Pepper
2-4 Eggs (1-2 Tbs water and salt to taste)
1- 1/2 Cups water (1 Tsp Bouillon of choice) or Chicken Broth
Cilantro to taste
Salt and pepper to taste
Optional Cheese of choice (I used mozzarella)
Group 3
Huevos Rancheros
1-2 Tbs Oil (canola)
3-4 Eggs
1/4 Chopped Onion
1 Roasted Anaheim pepper or Poblano Pepper
1-2 Tomatoes (Roma)
1- 1/2 Cups water (1 Tsp Bouillon of choice) or Chicken Broth
Cilantro to taste
Salt and pepper to taste
Optional Cheese of choice (I used mozzarella)

My version of how to make Huevos Rancheros. Delicious Mexican eggs smothered with a delicious red sauce. Breakfast is the most important meal of the day and these huevos rancheros won't disappoint! Enjoy!

• 1/2 onion chopped
• 1 roma tomato chopped
• 1 jalapeno diced and deseeded or not for spicy
• 1 garlic clove minced
• 4 tbsp vegetable oil
• salt to taste
• pepper if needed
• 1 tsp oregano
• 1/2 tsp cumin
• 4 tbsp tomato sauce
• 1/2 cup water or vegetable broth
• top with chopped cilantro
• eggs over easy or sunny side up
*homemade tostada optional

Huevos Rancheros With Chorizo & Porky Beans
PREP TIME: 15 minutes
COOK TIME: 15 minutes
SERVES: 6
INGREDIENTS
1/4 large white onion, left whole, plus ¼ large white onion, chopped
6 roma tomatoes, cored
3 to 4 chiles serranos, stemmed
2 garlic cloves, unpeeled
Kosher salt
1 tablespoon to 2 tablespoons fresh lime juice (optional)
6 tablespoons lard or bacon fat, divided
8 ounces fresh chorizo
2 (15-oz.) cans black beans, or equivalent amount of freshly cooked beans and their liquid
6 large eggs
6 tostadas
4 ounces queso fresco, crumbled
1 large avocado, sliced
BONUS RECIPE: Jamaica Syrup
1 cup dried hibiscus flowers
1 cup sugar
1 whole star anise
2 cups water
Bring to a boil, simmer for 10 minutes, then steep for 30 minutes.
Add you favorite alcohol and/or seltzer for a refreshing cocktail, mimosa, or mocktail.
