How To make Hearty Fish Stew
2 pounds fish fillet
4 slices bacon
diced
4 medium onions :
quartered
1 package frozen cut green beans
1 cup water
1 1/2 teaspoons salt
1/2 teaspoon crushed rosemary
1/4 teaspoon thyme
1 can (1 lb.) tomatoes undrained
1 can (1 lb.) sliced carrots :
drained
2 cans (10 1/2 oz.) condensed cream of potat
1 cup milk
1 cup half and half
Cut filets in 1 1/2-inch squares. Fry bacon until crisp. Remove from pan; dra in and save. Add onion, beans, water, salt, rosemary and thyme to drippings. C over; simmer 15 minutes.
Add fish. Cover, simmer gently until fish flakes easily (10-15 minutes). Add tomatoes and carrots. Combine remaining ingredients; mix and stir into fish mi xture. Heat to serving temperature. Sprinkle bacon on top.

I grew up eating different kinds of tomato stew with rice. There are various versions made with beef, chicken or fish. You'll love this African Fish Stew! I used a kind of fish I get from the Asian market called round scad. But you could use mackerel or any other fish you have on hand. Hope you enjoy this Fish Stew Recipe!
Ingredients Needed for Fish Stew
2 medium whole firm fish
8 medium roma tomatoes (extra ripe)
1 medium onion - chopped
7 garlic cloves
1 inch ginger root (peeled)
3-4 sprigs basil
1/2 teaspoon ground white pepper
1/2 teaspoon salt
1 cup neutral tasting oil (like vegetable oil, canola or corn oil)
3 Maggi cubes
1 habanero pepper (optional)

Ingredients
Lots of cod (or other white fish to suit your budget, or what is available)
2 cans of tinned tomatoes
tomato puree
veg stock
fennel seeds
potatoes
carrots
garlic
fresh chilli
fish sauce (nam pla)
the alternative version:
fish stock instead of veg stock
fresh chopped fennel
only 1 teaspoon of tomato puree
only 1 can of tinned tomatoes
