Betty's Fried Cheddar Cheese Cubes
Betty demonstrates how to make Fried Cheddar Cheese Cubes. These are great as an appetizer or for a party!
Fried Cheddar Cheese Cubes
6-inch by 2-inch by 1-inch block of Cheddar cheese (10 ounces), cut into twelve 1-inch cubes
2 eggs, well beaten
½ cup all-purpose flour
1 cup fine, dry breadcrumbs
about 2 inches of vegetable oil in a heavy pot (I used peanut oil.)
Versatile Catalina Dressing, for dipping (Recipe is available in Betty's Kitchen, but you may substitute blue cheese dressing, ranch dressing, marinara sauce, picante sauce, taco sauce, hot wing sauce, seafood sauce, or other sauce of your liking.)
Dip cheese cubes in beaten eggs to coat. Dredge in flour. Dip again in beaten eggs. Roll in breadcrumbs, pressing firmly so that breadcrumbs adhere. Place on wax paper. Chill for at least 30 minutes. (You may even place the coated cheese cubes in the freezer for the last 10 minutes.) Heat oil to 350 degrees (F). Fry half of the cheese cubes until golden brown. Remove to a plate lined with paper toweling. Repeat the frying process with the remaining coated cheese cubes. When drained, place all cheese cubes on a nice serving plate and serve immediately with Versatile Catalina Dressing or dipping sauce of your choice. YUM! This is *perfect* for a party! Lemon Cookies
Ingredients:
1/2 Cup salted butter (softened to room temperature)
1/3 Cup powdered sugar
1 Teaspoon lemon zest
1 Cup all purpose flour
Directions:
Preheat oven to 350F/175C. Line cookie sheets with parchment paper (optional). In the bowl of a stand mixer, or in a large bowl if using a hand mixer cream butter until smooth. Add powdered sugar and mix on low for 2 minutes. Zest 1 large lemon, this should give you about a teaspoon of zest. Add this into your bowl and mix on low until incorporated. Add in the flour and mix on low until the dough comes together. Lightly flour your rolling surface, form the dough into a disc and lightly flour the top. Roll to 1/4 Inch thickness and cut cookies using a 3 inch cutter. Re roll and cut your scraps as needed. You should get 12 cookies. Place on prepared cookie sheets and bake 10-12 minutes or until the bottoms are just beginning to brown. Let cool on the pan for a few minutes, then move to a wire rack to finish cooling. Dip cooled cookies in lemon icing and allow 2 hours to set.
Lemon Icing
Ingredients:
2 Tablespoons fresh lemon juice
1 Cup powdered sugar
Directions:
Combine fresh lemon juice and powdered sugar in a small bowl. Whisk until smooth. If too thin, add a little bit more powdered sugar. If too thick, add a bit more lemon juice. Dip tops of cookies, let set and enjoy!

3 Old Fashioned Appetizers Ready in 30 Minutes
3 Old Fashioned Appetizers in 30 Minutes
In years gone by we used to share our recipes with friends and neighbors but today many of us look for recipes on the internet. We are missing the human connection when we do that. I was so happy to bump in to Lil Robison in the grocery store and she shared a couple of quick delicious old-fashioned appetizers with me. I have added one of my own.
Ham, Cream Cheese Spread
1 can flaked ham
1 small tub of Herb and Garlic Spreadable Cream Cheese
3 green onions chopped.
Mix these all together and serve on crackers
Blue Cheese, Garlic Pull Apart Biscuits
1 package of pre made biscuits or use the recipe linked below
¼ cup butter melted
2 oz blue cheese or any melty cheese you prefer
1 clover of garlic minced fine
Melt the butter in a small baking dish and add the minced garlic. Open the tin of biscuits and quarter them. Add them to the bottom of the pan and then add the crumbled blue cheese over the biscuits. Cook according to package directions. I cooked them at 375 degrees for 18 minutes.
Salami Chips
Place a single layer of salami on a parchment paper lined baking sheet into the same 375-degree oven for 10 to 12 minutes until the chips are crispy. Remove from the oven to kitchen paper to drain off some of the fat and then allow to cool. You can use these simply as chips or as a dipper.
