Grilled Pimento Cheese Sandwich
== Ingredients ==
- 2 ½ cups sharp cheddar cheese
- 6 Tbsp. organic plain yogurt
- 6 Tbsp. avocado mayonnaise
- 4 oz. jar of chopped pimentos, drained
- 2 tsp. Tabasco chipotle sauce
- 1 tsp. Worcestershire sauce
- 1 - 2 slices of bacon for each sandwich, chopped
- ½ tsp. Garlic powder
- 1 tsp. Smoked paprika
- Red pepper chile flakes
- 2 tsp pasture raised butter
- Your favorite bread
== To make the appetizer, all the above ingredients plus ==
- 2 eggs
- Splash of milk
- Italian style bread crumbs
- Avocado oil
== Directions for the grilled sandwich ==
Cook enough bacon for your desired number of sandwiches. Place the bacon in a large fry pan over medium heat. Once the bacon is crispy, remove it to a paper towel covered plate to drain. Chop into small pieces.
In a large bowl, combine the cheese, mayonnaise, yogurt, pimentos, Tabasco sauce, Worcestershire sauce, garlic powder, smoked paprika and the red chile flakes. Heap some of this filling onto a slice of bread and add a sprinkle of chopped bacon. Place a piece of bread on top and add some butter.
Place the sandwich butter side down into a grill pan like I used in the video or a regular frying pan. Cook on medium heat until the bread is golden brown and then flip the sandwich over and brown the second side. Once everything is hot, serve this up and enjoy!
== To make the appetizer ==
Slice the crust off of the bread and cut each piece into 4ths. Then fill each piece of bread with a good amount of pimento cheese spread, top with a sprinkle with bacon and then top it with another piece of bread.
In a bowl beat an egg or two depending on how many appetizers you plan to make. Add a splash of milk and beat the eggs. In another bowl pour in some Aleia’s Gluten free Italian bread crumbs.
Place each little sandwich, one at a time into the egg mixture coating on all sides. Then place this into the bread crumbs to coat all sides. Place each one on a plate until all are dipped and covered with crumbs.
At the stove, cover the bottom of a medium fry pan with some avocado oil and 2 tsp. Of butter. Once hot about 350 degrees F add the appetizer sandwiches to the pan. Cook for about 1 to 2 minutes and then turn them over. Ideally you will want to brown up all the sides including the edges until golden brown. Place the appetizers on a paper towel covered plate to drain. Serve warm. Enjoy!

Masters Golf Tournament Pimento Cheese Sandwich on Sandwiches of History (our history)
Yes, it’s time once again for The Masters, one of golf's most venerable if not controversial tournaments. While I do enjoy playing golf, I am not here for that today. No, today I am tackling the Master Pimento Cheese Sandwich. Its history is, well, storied. Check out Atlas Obscura’s deep dive on it here Today, I’m using the recipe from Atlas Obscura’s page courtesy of Intentional Hospitality. Should be a tasty episode of Sandwiches of History. Oh, and for some reason, I accidentally omitted the footage of adding the minced onion. It was in there and should not be missed!
