How To make Halibut Creole(Cod May Be Used Instead)
1 1/4 lb 2 lbs Halibut Steaks;
Salt Freshly ground pepper 3 lg Tomatoes; peeled, seeded
-and chopped 1/2 c Green pepper; finely chopped
1/2 c Onion; finely chopped
6 tb Butter; (yah. right.)
3 tb Lemon juice
1/8 ts Tabasco
(For a six oz (raw) steak, I used 2 small Tomatoes, kept the green pepper and onion the same, threw in a chopped jalopena pepper, replaced the 6 tbsp of butter with 1 tsp margarine, and used about a tsp of Tabasco). Preheat the oven to 400F. Butter a shallow baking dish large enough to hold the fish in one layer, and place the fish in it. Season with salt and pepper to tasted and spread the tomatoes, green pepper, and onion over the top. Melt the butter with the lemon juice and Tabasco and drizzle it over the fish and vegetables. Bake about 25 minutes, basting with pan juices every 10 minutes. (My way, without the butter, with a 4 oz (cooked) portion of the fish, and about two-thirds of the vegetables, I counted it as 4 protein choices and 1 Fruit/Vegetable choice). Today I’m sharing my easy pan seared tilapia recipe! This recipe will give you fish that is crispy on the outside and perfectly flaky and delicious on the inside! Cook my tilapia recipe on a weeknight for a quick, delicious and easy dinner!

INGREDIENTS:
2 large tilapia fillets
1 tbsp olive oil
2 tbsp butter
2 garlic cloves
1/4 lemon
Parsley for garnish
Dry Batter:
2 tbsp all purpose flour
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red chilli flakes
1/2 tsp dried oregano
1/4 tsp dried thyme
METHOD:
1. Clean and pat dry 2 large tilapia fillets. Sprinkle with a pinch of salt and set aside for 5 mins
2. In a plate, mix all the ingredients mentioned under dry batter. Coat the fish on both sides with the dry batter and gently shake off excess
3. On low flame, heat 1 tbsp olive oil in a skillet/wide pan and infuse it with 2 crushed garlic cloves. Once the garlic starts to brown, remove it from the pan. This way we get a subtle garlic flavor in the dish
4. Next melt 2 tbsp butter in the oil. If using salted, don't add salt to the dry batter or it might end up too salty
5. Set flame to medium and gently place the fish. Fry for 3-4 mins per side. Be careful while flipping as it can break easily
6. Once the fish is done, squeeze the juice of 1/4 lemon all over and garnish with fresh parsley
7. Serve these delicious pan fried Tilapia fillets with sautéed veggies or a salad

SUBSTITUTES:
• What other fish can be used?
Bass, cod, snapper, halibut
• Can prawns be used?
Yes
• No parsley?
Coriander/cilantro can also be used
• No dried oregano/thyme?
Use 1 tsp mixed herbs/Italian seasoning
• No red chilli flakes
Use red chilli powder

TIPS:
• Be careful while flipping the fish as it can break
• Adding lemon juice at the end helps cut the richness of the butter
• Store leftover dry batter in an airtight container in the freezer and use it the next time you make this recipe
How To Make Creamy Cajun Sauce For Seafood | Meshascorner
Ingredients
8 cherry tomatoes chopped
1/2 cup chopped tri color peppers
5 large garlic cloves
1/2 of a medium onion
2 tbsp oil
2 tbsp butter
1 tbsp Cajun seasoning
1 tbsp salt free southwest seasoning
3/4 cup broth (chicken or veggie)
3/4 cup heavy cream
Salt and pepper to taste

Do you like to poach your fish? Poach fish perfectly with Chef Walter's recipe. Learn how to poach thick/thin fish fillet. Easy and quick recipes to enjoy your fish.
Place some white wine in a pan and bring it to boil. Add some onion some thyme to the oil. You can also add lemon zest or other herbs like parsley to add flavor. Now put your fish fillet inside the pan and cover it with a lid. Cook for at least one and a half minute. After that, turn off the flame and let the fish sit for 2-3 minutes. Press on the fish and check if it resists a lot, it is not cooked yet. If it seems tender and muscle sheets are separating, it's cooked. Cook it a little more if it's uncooked.
Strain off the leftover sauce in the fish pan. Add a little bit of cream to it. Bring it to boil. Add the butter and flour mixture and to it and mix it all together. Keep adding butter and flour mixture little by little and mixing it. Thicken the sauce and add some mustard in it too. Add some salt and pepper and the sauce is ready. Add some fish juices coming out of the fish in the sauce too.
Add some herbs to the sauce and drizzle it on the fish to enjoy your poached fish.

Ingredients! Oven Baked Fish
salt to taste
pepper to taste
1 tsp dried mustard
1 tsp smoked paprika
1/3 tsp dried pepper flakes
crackers with chopped parsley (optional)
bake on 350 degrees for 20 minutes
