How To make Granny Smith Apple Pie
Shortening pie dough: 2 1/3 c Flour
1/2 ts Salt
3/4 c Shortening, cold, cut into p
Pie filling: 14 1/2 tb Sugar
3 tb Flour
3/4 ts Cinnamon
1/4 ts Nutmeg
1/4 ts Ginger
1/4 ts Salt
3/4 ts Lemon zest
2 1/2 lb Apples (granny smiths, of co
1 ts Lemon juice
3 tb Unsalted butter, cut into bi
1 tb Half&half
Honey spiced whipped cream: 3/4 c Heavy cream, well chilled
1 tb Honey
1/4 ts Cinnamon
1/4 ts Ginger
1/8 ts Nutmeg
In a bowl, stir together flour and salt. Add shortening and blend until mixture resembles coarse meal. Add 4-6 Tbsp ice water or enough to form into soft but not sticky dough, tossing the mixture with a fork. Form dough into a ball, flatten it slightly, dust with flour and chill it, wrapped in wax paper, for 1 hour. Divide dough into 2 pieces, one slightly larger than the other. Chill the larger piece, wrapped in wax paper. Roll out the other, 1/8-inch thick on a floured surface, and fit it to a 9-inch pie plate, and trim the edge leaving a 1/2-inch overhang. Chill the pie shell while making the filling. In a large bowl, stir together 14 Tbsp sugar, flour, cinnamon, nutmeg, ginger, salt, and zest. Peel, quarter, and core the apples; slice thinly, crosswise, and add them to the sugar mixture, tossing to coat well. Mound the apple mixture in the pie shell, sprinkle with lemon juice and dot with butter. Roll out the larger piece of dough to a 13 or 14-inch round on a floured surface and drape it over the filling. Trim top crust, leaving a 1-inch overhang. Fold overhang under bottom crust, pressing the edge to seal it. Crimp the edge decoratively with a fork. Make slits in the top crust to form steam vents. Brush with h&h and sprinkle with the remaining sugar. Bake pie in lower third of a preheated 425f oven for 15 minutes, reduce heat to 375f and bake for 40-45 minutes more, or until filling
is bubbling and crust is golden. Transfer pie to a rack to cool. In a chilled bowl, beat cream with the honey, cinnamon, and nutmeg until it holds soft peaks. Transfer to a serving dish. Homemade Apple Pie Crusty and Flaky
A classic style apple pie that's hard to beat made with a buttery crusty flaky crust. This recipe uses two types of apples, the green granny smith apples for their tartness and softness plus the yellow jonathans which are sweeter and juicier. A few subtle spices are used including star anise, clove and cinnamon. I find that too many recipes are overpowered with spice. This is a perfect balance to enhance the apple flavour and not over power it. By creating the lattice work, the steam evaporates giving you a firmer filling and crustier crust that's not soggy. Great for thanksgiving, Christmas or simply anytime!

Ingredients:
1 Frozen pie dish (deep dish)
1 Pie crust for topping
1 1/4 lbs honey crisp apples cored, sliced, peeled
1 1/4 lbs granny smith apples cored, sliced, peeled
3/4 cup white sugar
1/4 cup brown sugar
2 tbsp flour
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 lemon
1 tsp lemon zest
1 tsp vanilla extract
1 egg beaten
1 tbsp sugar
1 tbsp butter
1 tub vanilla ice cream
Instructions:
1. Preheat oven to 375F. Take frozen pie crusts from the freezer and allow to thaw in the fridge.
2. In a large mixing bowl, combine the sliced apples, sugar, flour, salt, cinnamon, nutmeg, lemon juice, lemon zest, and vanilla extract. Mix until all apple slices are coated in the mixture.
3. Once pie crust is thawed, use a fork to poke holes in the bottom of the crust. Fill the crust with the apple filling. Place pie crust on top and press the fork down along the edge of the crust to seal. Brush the pie with the beaten egg and sprinkle with the tablespoon of sugar. Cut four slits into the top of the pie to create a vent.
4. Bake the pie for 50-60 minutes until the crust is golden brown. Allow to cool before slicing, top with vanilla ice cream and serve.

This easy to make and delicious apple pie recipe has a flakey butter crust and tender apple filling that’s bursting with flavor and perfectly sweet! Instead of adding lots of flour or cornstarch to thicken the filling I cook the juices down into an apple caramel, which holds all those apple pieced together and really amps up the flavor and makes a tasty pie!

Make This Apple Pie Filling for your Pies & Tarts

Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.
