How to Make Gingerbread Cookies for Christmas ????????
Gingerbread Cookies – When it’s near Christmas and new year, we all usually have the mood to make cookies. So let’s make some cookies for the holiday season. Making cookies can be very tedious if you’re doing it alone. I always have my kids to help out in the kitchen. Make use of their tiny little hands will make the occasion special and merry. Gingerbread is traditionally Christmas cookies that makes the occasion fun with all the piping and creative artwork for the frosting. I’m no professional in the piping, so please excuse me if you can’t bear them. For me, it’s not so much about how pretty they are, is more about who you’re making them with. I can’t wait to share this moment, and I hope you’ll like both egg and eggless recipes. Merry Christmas!

egg version:
eggless version:
Ingredients:
• Egg Version
300g [2¼ cup + 3 tbsp] all-purpose flour
20g [2½ tbsp] cornstarch
4g [1¾ tsp] ground cinnamon
2g [1 tsp] ground ginger
⅛ tsp ground nutmeg
⅛ tsp ground clove
¼ tsp salt
¼ tsp baking soda
113g [½ cup] unsalted butter, softened
100g [½ cup] light brown sugar
90g [¼ cup + 1 tbsp] molasses
1 egg
• Eggless Version
300g [2¼ cup + 3 tbsp] all-purpose flour
20g [2½ tbsp] cornstarch
4g [1¾ tsp] ground cinnamon
2g [1 tsp] ground ginger
⅛ tsp ground nutmeg
⅛ tsp ground clove
¼ tsp salt
¼ tsp baking soda
113g [½ cup] unsalted butter, softened
100g [½ cup] light brown sugar
90g [¼ cup + 1 tbsp] molasses
14g [1 tbsp] oil
• Sugar Icing Frosting
120g [1 cup] icing sugar
1½ tbsp egg white**
2 tsp water
**For eggless: 1½ tbsp milk
Instructions:
• Egg Version
1. Cut up some butter and set aside until it is softened.
2. In a large bowl, sift all the dry ingredients. Give it a quick whisk and set aside.
3. In a large mixing bowl, add the softened butter and sugar. Mix on high speed until creamy and fluffy.
4. Add the molasses. Mix until well combined.
5. Add the egg. Mix until combined.
6. Add in the sifted dry ingredients in two batches. Fold in with a spatula until the white is no longer visible, then add in the balance. Continue folding in until it comes together as a dough.
7. Transfer the dough in between two parchment papers (non-stick preferably). Roll out the dough to about 5mm thick. Refrigerate for at least 2 hours or overnight.
8. After 2 hours, you can use your desired cookie cutter to cut out into shapes.
9. Place them on a baking tray.
10. Bake in preheated oven at 180°C/350°F for 10-12 minutes or until the edges are brown.
11. Place on the cooling rack. Let it completely cool before you pipe the frosting.
• Eggless Version
(steps are exactly like the egg version. Just replace the egg with 1 tbsp of oil.)
• Sugar Icing Frosting
1. Separate 1 egg. Give the egg white a stir and set aside.
2. Sift all the icing sugar.
3. Add 1½ tbsp of egg white (for eggless, just add 1½ tbsp of milk)
4. Use a spatula to mix it a bit.
5. Add the water. The frosting varies depending on the existing moisture. So do add 1 tsp add a time to test it out. With an electric mixer, mix it on medium speed until white and fluffy.
Remark: depending on the design of your piping. If you’re doing some line art like mine, the consistency of the frosting will be a little thicker. The frosting will stay on your spatula when you pick it up, and to the count of 3, it will hang on on the spatula.
If you’re doing filling for the entire cookie surface, add tiny bit of water at a time until the consistency is flowing like a ribbon. Be careful not to over add water, else you’ll have to start adding some icing sugar again (you know what I mean )

½ tsp. baking powder
1 tsp. mixed spice
Pinch of salt
60g maple syrup
60g 100% coconut oil
Icing pen for decoration (optional)

Method:
1.Preheat the oven to 190°C.
2. Add all of the ingredients to a mixing bowl and mix until you form a ball of dough.
3. Roll out the dough over a clean work surface or straight on top of some baking paper, using a rolling pin and a light sprinkling of flour if needed. Aim to make a sheet of dough around 0.5cm thick.
4. Use a gingerbread man cookie cutter to cut out your gingerbread men – you should get around 15 from the dough. Place on a lined baking tray and bake for around 8-10 minutes.
5. Once baked, allow to cool before piping with icing sugar if decorating. Enjoy immediately or keep for up to 3 days in an airtight container.

• 6 tablespoons salted butter, softened
• 1/4 cup brown sugar, tightly packed
• 1/3 cup dark molasses
• 1 large egg
• 3/4 teaspoon ground cinnamon
• 3/4 teaspoon ground ginger
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground cloves
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1¾ cups all-purpose flour

1️⃣ 00:00:12 - Use a hand mixer or stand mixer to cream butter and brown sugar until fluffy. Mix in molasses, egg, cinnamon, ginger, allspice, cloves, baking soda, and salt until smooth, scraping the sides as necessary. Add in the flour until well incorporated.
2️⃣ 00:01:22 - Remove the dough from the bowl and wrap the dough in plastic wrap. Refrigerate 1 hour.
3️⃣ Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
4️⃣ 00:01:36 - Roll the dough out to 1/4-inch thickness on a lightly floured surface. Use a gingerbread man cookie cutter (or other shapes) to cut out cookies. Lay cut cookies on the prepared baking sheet, 1 to 2 inches apart. Re-roll the dough as necessary to cut out cookies until dough is gone.

Gingerbread Cookies Recipe
Gingerbread Cookies are some of the favorite cookies to be prepared for Christmas. The spices used and molasses give an amazing flavor and the aroma while baking is amazing. Kids really enjoy making them during the holiday season.

Ingredients
Makes about 3 dozen cookies
2 1/2 cups (315g) flour
1/3 cup (75g) dark brown sugar
1/2 tsp (3g) salt
1 tsp (3g) ground cinnamon
2 tsp (4g) ground ginger
1/2 tsp (2g) ground nutmeg
1/4 tsp (1g) ground cloves
1 tsp (6g) baking soda
1/2 cup (113g) butter, room temperature
1/3 cup (100g) molasses
1 egg
Sugar Icing
1 cup (120g) powdered sugar
1-2 tbsp (15-30ml) lemon juice or milk
1. In a large bowl whisk dry ingredients together: flour, salt, spices and baking soda.
2. In another bowl cream butter with sugar. Add the egg and molasses and mix well.
3. Incorporate dry ingredients to the butter mixture and stir until the dough comes together. Divide the dough in two discs and cover each with plastic wrap and refrigerate for at least 1 hour up to 3 days.
4. Roll the dough between two layers of plastic wrap, or between two layers of parchment paper until 1/8 inch (2-3 mm) thick. If you want them crispy roll the dough very thin. If you want them softer roll it out thicker.
5. Preheat oven to 350 F(180C). Line two baking sheets with parchment paper.
6. Cut the dough into desired shapes using the cookie cutters. Re-roll the remaining dough and cut more shapes. I use a fork to remove the dough between the cookies. Place the cookies onto the prepared baking sheets, leaving a little space between them.
7. Bake for 7 to 10 minutes (depending on the cookie size). Allow to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
8. To make the icing simply combine powdered sugar with milk or lemon juice. Spoon the icing into the piping bag and decorate the gingerbread cookies as desired. Allow to set.
