2 cups of ripe tomatoes
2-3 garlic cloves chopped
1/4 large onion chopped
4 whole cloves
2-3 cups chicken broth (depending on water content in your tomatoes)
2 tbsp butter
2 tbsp flour
1 tsp salt

What could be better for a summer lunch than a nice cold refreshing soup?
So, cook with me this delicious, super easy, nutritious and refreshing cold summer soup that is great also for a meal prep.
RECIPE (yields 2):
Ingredients:
5 tomatoes
1 big sweet Palermo pepper (1 big red bell pepper would be ok too)
2 carrots (medium or big)
3 cloves of garlic
Salt, black or 4-color pepper to your taste (feel free to use any spices of your choice, but I am a minimalist)
Ground caraway
Lemon juice to taste
1 tbsp olive oil
a handful of fresh basil leaves
Method:
- Pre-heat the oven to 200 °C / 390 °F
- Chop the carrots and pepper and put them to the baking tray. Add 3 cloves of garlic (you can smash them prior to roasting, but it is not necessary)
- Season with salt, pepper, caraway and a squeeze of lemon juice.
- Add approx. 1 tbsp of olive oil with high smoking point and stir the vegetables making sure that they are all coated with oil and seasoning.
- Roast in the pre-heated oven for about 20 - 25 minutes.
- While the carrots, pepper and garlic are roasting, chop the tomatoes and season them with salt, pepper and a bit of lemon juice.
- Once the first vegetables are roasted, add chopped tomatoes and roast for another 20 - 25 minutes.
- Once all vegetables are roasted, let them cool down completely.
- Then transfer to a blender, add a handful of fresh basil leaves and blend. The consistency is up to you, we like it smooth.
- Taste and adjust the flavor according to your liking.
TIPS
1. Meal prepping and preserving:
- You can transfer the soup to a mason type jar, seal it properly. It will last up to 5 days in the fridge.
- You can cook larger amounts of this soup, preserve it and enjoy it all year round. Just multiply the amount of all the vegetables and adjust the seasoning. Then transfer it to the mason type jars, seal with the lids and preserve by sterilizing (canning).

In summer, when the seasonal vegetables are the freshest and cheapest, it is the best time to stock your pantry with this delicious soup, so that you can enjoy it also in the cooler months. Then, you can just open the jar, heat the soup and enjoy it warm.
2. Cooking for children
Children have a completely different taste sensation then adults. When I was cooking this soup for my son when he was little (around 3 - 7 years of age), he wouldn't eat it unless I added a little bit of sugar or honey into it. And my granddaughter is the same.
So please, if your children don't love the food the same way than you do, it's because the flavor for them might be completely different than for you.
So adjust it for them. A little bit of sugar at this age will not affect their future eating habits. But if you give them food they love you will give them a good foundation for the positive, healthy and passionate relationship with food.
3. Basil
You can tear off the lower leaves and use them in the recipe. Then, the rest of the stem you can place into a jar with water where it will grow roots in a few days.
4. We like to eat this soup with one of my versions of an Australian Damper, an iconic Australian soda bread. You can find the recipe on my YouTube channel .
