Super EASY Vegan Spring Rolls with Peanut Sauce!
Looking for a quick snack? These Vegan Spring Rolls are about as simple as it gets. The sauce though... this peanut sauce is not only delicious, it's also low in fat due to no oil and PBFit instead of peanut butter!
Ingredients:
(Peanut Dipping Sauce)
4 Tablespoons PBfit All-Natural Peanut Butter Powder:
Black Pepper
2 Tablespoons Soy Sauce:
2 Tablespoons Water
2 Tablespoons Brown Sugar
1 teaspoon Garlic Powder
1/2 teaspoon Rice Wine Vinegar:
(2 Rolls)
1/4 Block Extra Firm Tofu:
1/2 English Cucumber
1/2 Red Bell Pepper
1 Small Carrot
2 Iceberg Lettuce Leaves
2 Rice Paper Wraps:

The Easiest Spring Rolls and Peanut Sauce
Spring rolls, summer rolls, Gỏi Cuốn, whatever you prefer to call it these are great for warm weather. The fillings are easy to make and you can pick and choose your favorite proteins and vegetables to put in. Dip in a super easy peanut sauce that anyone can make.
Ingredients:
Fillings
200g pork shoulder
1 tsp salt
10 large Shrimp
1 head leaf lettuce
1/2 bunch mint
1/2 bunch cilantro
dried spring roll wrapper (rice paper)
100g dried rice vermicelli noodles
PEANUT DIPPING SAUCE
3 tbsp hoisin sauce
3 tbsp peanut butter
1 tsp sugar
Broth or water to thin out
T tsp Sambal chili garlic paste to taste, optional
Directions
PORK
1. Add the pork and salt to a small pot filled with water. It should be enough to cover the pork. Bring to a boil on high heat and then lower to medium and cook for about 25-30 minutes or until pork fully cooked
2. Remove the pork and place into a water bath to cool. Once cooled, thinly slice the pork
SHRIMP
3. Peel the shrimp and add to a small pot of water. You can use the same pot of water as the pork.
4. Boil on medium-high heat for about 1 to 2 minutes or until the shrimp is no longer translucent.
5. Once cooked, remove from the pot and cut the shrimp in half along the body.
RICE NOODLES
6. Cook the rice noodles according to the package instructions. Timing can vary wildly depending on noodle thickness and brand. Drain and cool the noodles under cold, running water to stop it from cooking further and reduce clumping.
VEGGIES
7. Rinse and dry all vegetables and herbs.
PEANUT DIPPING SAUCE
8. Add in hoisin sauce, peanut butter, sugar, sambal (if using), and water (I used the water from boiling the pork) and mix thoroughly. Add more water to thin out to desired consistency.
9. Sprinkle ground peanuts onto the sauce dipping bowl.
SPRING ROLL WRAPPING
10. Add warm water to a bowl and turn the rice paper sheet to dampen all around. Don’t soak it for too long or it will get too soft and sticky. Lay rice paper on a flat surface to begin assembling the rolls.
11. Add lettuce towards the bottom of the rice paper, making sure to leave at least 1 inch of space on either side of the rice paper. Layer on top with some cilantro and mint leaves.
12. Add the noodles across the vegetables, spread evenly across.
13. Add shrimp in the middle of the rice paper with the orange side facing down.
14. Layer the sliced pork on top of the shrimp.
15. Fold the left and right sides towards the middle. Then fold the bottom up to cover the noodles. Roll it upwards, as tight as you can - lightly squeeze it as you roll.
