How To make Family Style Chuck Wagon Chili
1 lb Lean ground beef
1 tb Minced garlic
1 cn Whole tomatoes (16 oz can)
- undrained - coarsely chopped 1 cn Kidney beans (16 oz can)
- rinsed and drained 3/4 c Picante Sauce
2 ts Chili powder, as desired
- as much as 3 teaspoons 2 1/2 ts Ground cumin
2/3 c Sliced green onions w/tops
- 1/4-inch pieces
OPTIONAL TOPPINGS:
Shredded monterey jack or - cheddar cheese Hot cooked rice Sour cream Chopped cilantro Brown meat with garlic in large saucepan or Dutch oven; drain. Stir in remaining ingredients except green onions and optional toppings. Bring to a boil; reduce heat and simmer uncovered 15 minutes, stirring occasionally. Add green onions; simmer 5 to 10 minutes or until chili is desired consistency, stirring occasionally. Ladle chili into bowls; serve with optional toppings and additional picante sauce. Makes 4 servings, about 5 cups chili. A real crowd pleaser, this savory chili tastes like it simmered all day, but it's ready to serve in about half an hour. If you prefer, black beans or pinto beans may be substituted for kidney beans.

Instant Pot Chili (Chuck Wagon Style)
Cook with me and try this hearty meat chili with bite size pieces of beef and pork and bacon, of course! I show you step by step how to make instant pot recipes that your family will be sure to love!
INGREDIENTS:
2 lbs chuck roast, cubed
1 lb pork shoulder, cubed
12-16oz bacon
2 medium sweet onions (or Maui onions)
1 bottle beer
2 cans (15oz) fire roasted tomatoes, diced
1 can beef consumé (or beef both if you can't find consumé)
2 tsp crushed or minced garlic
4 jaleneńo peppers (optional)
1/4 cup chili powder (I use Mexican hot chili powder)
1 tsp dried oregano
1 tsp cumin
1 tsp coriander
1/2 tsp cayenne pepper (optional)
Salt and pepper to taste
3 tbsp tomato paste

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice
