Today we are cooking a vegetarian burger. The goal is to ultimately have a collection of burger recipes to substitute over meat. We will be cooking a Falafel Burger made from chickpeas & herbs. It will be topped with freshly made couscous tomato salad & we will be making a tahini (sesame seed paste), lemon & dill sauce and finish it up with a bit of Feta. It could be called the middle eastern burger as well. A great vegetarian burger for the collection.

Falafel Burger Recipe | Vegan Burger | Plant-Based Burger Recipe
This homemade falafel burger recipe is crispy from the outside and green and juicy from the inside. Exactly like the famous falafel balls recipe, just in a burger shape that is much more fun to eat. This burger recipe is absolutely vegan and it’s pretty easy to make. Great burger recipe for parties and holidays. These burgers can be bakes for a healthier version or can be fried for a tastier version ;)

Makes 10 burgers
Ingredients:
For the falafel:
2 cups (400g) dried chickpeas, don’t use canned
1 small Onion
3-5 garlic cloves
1/3 bunch Parsley
1/2 bunch Cilantro
4 tablespoons (30g) Flour/breadcrumbs or chickpea flour for gluten free version
1¼ teaspoon Salt
1/4 teaspoon Pepper
1 teaspoon Cumin
1 teaspoon Paprika
2 teaspoons baking soda
Oil for frying
For serving:
Burger buns
Tahini sauce
Sliced tomatoes
Pickles
Red onion
Lettuce
Directions:
1. Put the chickpeas in a large bowl and cover them with about 2-3 inches of cold water. Let soak overnight, then wash and drain.
2. To a food processor add roughly chopped onion, garlic cloves, parsley, coriander and spices. Pulse for 30-60 seconds. Add drained chickpeas to the food processor, process until smooth but still crumbly.
3. Transfer to a large bowl, add breadcrumbs/flour and mix until combined. Cover and refrigerate for 1 hour.
4. Remove falafel mixture from the fridge and shape into burger patties.
5. In a large pan or skillet heat olive oil. Fry falafel burger over medium-high heat for 2-3 minutes on each side. Transfer to a paper towel. Second option: spray with cooking oil and bake the burgers for 25 minutes at 200C (400F).
6. Spread some tahini sauce or hummus on the burger bus, place the burger on top. Garnish with tomato, red onion, pickles and lettuce.
Notes:
• If your food processor is not big enough, make the falafel mixture in two batches.
• You can refrigerate falafel mixture up to 3 days (covered).
• You can freeze falafel mixture up to a month.

Ingredients:
Falafel patties:
1 cup, dried chickpeas/garbanzo beans soaked overnight and drained
1 bunch of cilantro/coriander leaves
3 to 4 cloves garlic
1 roughly diced onion
Lemon juice from half a lemon
Salt to taste
¼ tsp baking soda
½ tsp coriander powder (optional)
1 tsp cumin powder
½ tsp paprika/red chilli powder
1 tbsp plain flour or maida (for binding the patties) - Adjust the quantity as required
Oil for frying
Chilli mayo sauce:
3 tbsp mayonnaise / vegan mayonnaise
2 tbsp chilli sauce
Burger:
Burger buns of your choice
Sliced onions
Sliced tomato
Sliced lettuce
(Any other veggies of your choice)
Method:
1. Add all the ingredients needed for falafel patties into a food processor and blend well to form a coarse mixture
2. When the falafel mixture is pressed together, it should hold its shape
3. Add more plain flour if needed for the falafel patties to hold shape
4. Shape the mixture into patties and deep dry them until golden & crisp (Can be baked as well- 25-30 mins at 375F)
5. Ensure both sides of the patties are cooked
6. Mix mayo and chilli sauce to form chilli mayo sauce (Or tahini sauce can be used as well)
7. Apply the sauce on the base of the burger bun
8. Layer with the falafel patty, tomato, onions and lettuce
9. Enjoy the burgers fresh with some fries at the side

Easy, simple, tasty. Introducing dinner, without all the falafel. Well, actually, all of it, but you get the idea…
Serves 2
30ml Coconut & Lemon PERi-PERi sauce
400g cooked tinned chickpeas (drained)
20g of plain flour
Small handful of chopped coriander
Small handful of chopped parsley
Prep time: 5 mins
Cook time: 8-10 mins
1 - Finely chop parsley and coriander, then add all ingredients to the food processor.
2 - Blend together all the ingredients, then form into 2 burgers - dust them with some extra flour to ease forming.
3 - Preheat a frying pan to medium-high heat with a drizzle of oil.
4 - Place the burgers in the pan and cook for 8-10 minutes, turning occasionally.
5 - Remove from pan and serve on a mixed salad and drizzle with Coconut & Lemon PERi-PERi - enjoy the new flavour!

-400 grams (14 oz) cooked chickpeas
-1 onion
-1 garlic
-1/4 cup (60ml) plant based milk
-¼ cup (30 grams) chickpea flour
-1/3 cup (50 grams) bread crumbs
