1/2 cup Creamy peanut butter
4 ounces Ritz crackers -- 1 sleive-see
1 cup White chocolate chips
or
Semisweet chocolate chips :
o Milk chocolate chips 1 tablespoon Shortening
2:00 Note: 1 sleeve (4 ounces) round butter-flavored crackers Spread peanut butter on half of the crackers; top with remaining crackers t make sandwiches. Refrigerate. In a double boiler over simmering water melt choice of chocolate chips and shortening, stirring until smooth. Dip sandwiches and place on waxed paper until chocolate hardens. Yield 1 1/2 do Shown in a bowl, lined with linen napkain, part chocolate dipped, part whit chocolate dipped.

Peanut Butter Chocolate Ritz Cracker Sandwiches: A Delicious and Easy Treat!
Every year I try to share a classic holiday cookie recipe here. I find that no matter how many cookies we make ourselves, it’s always fun to see how someone else makes them so we can get new ideas. Today I'm sharing Chocolate Peanut Butter Ritz Cookies that I dress up with some cute holiday colors. They are really easy to make and taste absolutely delicious. In this episode I make them with my son!
These are a more recent classic cookie. I think they were initially developed by people who wanted to recreate the taste of Girl Scout Cookies. There is no need for an oven for these cookies, which makes them even more fun to make with young children. I start by making the peanut butter Ritz sandwiches, then I dip them in melted chocolate. At this point it’s really smart to have them on a cookie sheet lined with wax paper to cool down, otherwise they’ll make a big mess on your countertops.

Betty's White Chocolate Ritz Cracker Sandwich Cookies
Betty demonstrates how to make her quick and easy White Chocolate Ritz Cracker Sandwich Cookies. These are a delicious contrast of sweet and salty and also crunchy and chewy. They make a great (pickup) finger food dessert for your party--and oh, so super easy!

White Chocolate Ritz Cracker Sandwich Cookies
16 oz. box Ritz crackers
18 oz. jar creamy peanut butter
12 oz. bag white chocolate chips
Assemble cookie sandwiches by spreading peanut butter on the flat side of one Ritz cracker and capping it (flat side down) with another identical Ritz cracker. Continue to make these sandwiches, placing them in one layer on a flat tray or dish until you have the number of cookies you want. Now, melt about half of the bag of white chocolate chips in a double boiler until smooth an creamy. If you do not have a double boiler, just melt the white chocolate chips in a saucepan over low heat, stirring often. Next, take one cookie sandwich at a time and dip it in the melted white chocolate, coat it entirely, and remove it to a flat plate or tray covered with waxed paper. You may need two spoons to accomplish this, or tongs to remove the cookie. This procedure must be done quickly, so that the sandwich does not fall apart. Coat as many of the cookie sandwiches with the melted white chocolate as you want for your purpose. When the tray of coated sandwiches is full, let it sit at room temperature for the coating to harden. You may speed this up by placing the tray in the freezer for 10 or 15 minutes. Remove the coated sandwiches from the waxed paper on the tray to a serving dish. You may place them in layers, now that they are set. These cookies look and taste scrumptious! I think you will want to make them many times!!!
