How To make Date Pudding Cake (Bon Appetit/July 1983)

3 Eggs 2 1/2 c Chopped dates 1 c Sugar 1 c Chopped nuts 1/4 c AP flour Vanilla ice cream or 1 ts Baking powder Whipped cream 1/4 ts Salt Preheat oven to 350. Grease 9 x 9" baking pan. Beat eggs in large bowl until light and fluffy. Gradually add sugar, beating until thick. Stir in flour, baking powder and salt. Mix in dates and nuts. Pour batter into prepared pan. Bake about 30 minutes. Serve warm with ice cream or whipped cream. -----

Erica Abrams Locklear, a professor of English and humanities at the University of North Carolina Asheville, speaks on her latest book, Appalachia on the Table: Representing Mountain Food and People. When her mother passed along a cookbook assembled by her grandmother, Locklear thought she knew what to expect. But rather than a homemade cookbook full of apple stack cake, pickled watermelon or other “traditional” mountain recipes, she discovered recipes for devil’s food cake with coconut icing, grape catsup, and fig pickles. Her book explores how long-held preconceptions about Appalachian foodways color our perception of the region and its people.
