How To make Curried Lentil & Carrot Soup
1 tb Vegetable oil
4 oz Onions, chopped
6 oz Red lentils
4 oz Carrots, sliced thinly
1 tb Madras curry powder
2 pt Boiling water
1 1/2 ts Salt
1/4 ts Paprika
2 sl Bread, made into crumbs
Cilantro, to garnish Heat oil in a large soup pot. Add the onions & saute them for about 10 minutes. Add the lentils & cook for 1 minute, stirring
constantly. Mix in the carrots & curry powder. Cook for 2 minutes. Add the boiling water, salt & paprika. Bring to a boil, lower heat & cover. Simmer for 1 hour, stirring occasionally. Add the breadcrumbs & continue to cook for another 5 to 7 minutes. Ladle into soup bowls & garnish with cilantro.

Curry Carrot Lentil Soup
1 cup dry lentils
1 large onion, diced
¼ cup olive oil or vegetable oil
4 cloves of garlic, minced or 4 tsp. of pre-minced garlic
Juice of 1 lemon
2 tsp cumin
1 tsp curry
½ tsp thyme
Salt and Pepper to taste
1 pinch of red pepper flakes
1- 24 oz. can of spaghetti sauce
1- 15oz. can sliced carrots, drained
6 cups chicken broth or vegetable broth
Heat oil in a large pot. Add onions and cook until translucent. Stir in garlic and immediately add in spaghetti sauce and broth. Add lentils and seasoning. Stir and simmer for 30 minutes. Add carrots. Simmer for another 10 minutes. Add juice of lemon to finish.

1 cup dry red lentils (200g approx.) -
(Soak lentils in water for 20-25 minutes)
Squash (500g approx.) - cut into cubes
3 tablespoon olive oil OR oil of choice
1 cup onion (150g approx.)
1 tablespoon minced/crushed ginger (3 - 4 cloves of garlic)
1 tablespoon minced/crushed garlic (1 inch ginger)
1/2 cup tomato puree OR passata (strained tomatoes)
1 teaspoon turmeric powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon (or more) cayenne pepper (OPTIONAL)
4 cups water OR broth
Salt to taste
Garnish:
1/2 teaspoon crushed black pepper
1 or 2 teaspoon (to taste) lemon OR lime juice
2 tablespoon Olive oil
