Polish City Chicken! (It's Not Chicken?)
Cube up pork butt or pork tenderloin into 1 inch thick and 2 inch square chunks. Put 5 pieces on a wooden skewer starting with smaller pieces on the bottom and bigger pieces on the top to resemble a chicken drumstick.
Season with equal parts salt, pepper, onion powder, garlic powder
backing the salt down a little. Then put the pork drumsticks in the refrigerator for about 2 to 4 hours.
Roll them in flour, then egg wash, then Rye Bread Crumbs!
Deep fry until golden brown then bake in the oven until the
meat is 145 degrees.
Serve with mashed potatoes, gravy and sauerkraut with a little
diced ham cooked in with it.

Ingredients:
2 lb boneless pork or veal, cut into a 1x2-inch rectangle
1 tbsp garlic powder
1 tbsp onion powder
½ tbsp smoked paprika
1 tsp salt
1 tsp black pepper, ground
¼ tsp chili powder
4 tbsp all-purpose flour
½ cup milk
4 eggs beaten
3 cups breadcrumbs
frying oil, enough to cover skewers

0:11 In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, and chili powder.
0:24 Sprinkle the spice blend over the meat and mix until all pieces of meat are well-seasoned.
0:35 In a mixing bowl, whisk together milk and eggs. Pour the breadcrumbs into another separate tray.
0:42 Preheat the oven to 350 degrees F and prepare a large baking dish with a wire rack.
0:46 Heat the oil for frying to 350 degrees F.
0:49 Once the oil is hot, dip your skewers first into the flour, then into the egg mixture, and then into the breadcrumbs, and then back to the egg mixture and breadcrumbs again. Skewer the chunks of meat.
1:03 Fry the skewers for 2 to 3 minutes on each side or until the coating is crispy and golden brown.
1:08 Place the fried skewers onto a wire rack and bake at 350 degrees F for 20 minutes.
1:12 Serve with dipping sauce and your choice of sides.

History
A similar dish once known as mock chicken was described as early as 1908.The first references to city chicken appeared in newspapers and cookbooks just prior to and during the Depression Era in a few cities such as Pittsburgh. City chicken typically has cooks using meat scraps to fashion a makeshift drumstick from them. It was a working-class food item. During the Depression, cooks used pork or in some cases veal because it was then cheaper than chicken in many parts of the country, especially in those markets far from rural poultry farms.[citation needed] Sometimes cooks would grind the meat and use a drumstick-shaped mold to form the ground meat around a skewer.
Distribution
The dish is popular in cities throughout the central and eastern Great Lakes region of Ohio and Michigan as well as the northeastern Appalachian regions of Pennsylvania and Upstate New York, and at least as far south and west as Louisville, Kentucky. City chicken is commonly found in the metropolitan areas of Cincinnati, Cleveland, Detroit, Binghamton, Erie, Pittsburgh, Buffalo and Scranton, hence, the dish's urban title. In Canada, the deli-counter version is popular in the Ottawa Valley and Kitchener area.
